Our daughter will be 3 during our next trip. Will she be able to use Lilo's playhouse a day before she turns 3. Will we need to bring any proof of her age?

According to Disney's website:

Know Before You Go
View rate, reservation and other important information about the Children’s Activity Centers.

  • Children must be 3 to 12 years old and fully potty-trained. No pull-ups allowed.
  • A flat rate of $55 is charged per child for the duration of the evening.
  • Dinner is included in the cost of the service and parents can order kid-friendly fare for their children at check-in. Mealtimes are approximate, with dinner served at 6:00 PM and snacks at 10:00 PM. Given prior notice, Lilo’s Playhouse can accommodate children with special dietary needs. No outside food please.
  • Please call (407) WDW-DINE, (407) 939-3463 or the Resort hotel’s Front Desk for additional information, operating hours or to make reservations.
If your child doesn't meet this criteria some hotels also offer in room childcare.

I don't know how rigid Disney is about the age requirement but one day off doesn't sound like a biggie to me although it might be an insurance necessity. Call and ask; what do you have to lose? :).
