They could have signed up for the Behind the Seeds tour and they would have been able to sample cucumber through that (it was offered to us on the tour we did in 2018). Less hassle than getting banned.

Actually she did fall trying to get back in. Luckily for her she didn’t seem to be hurt. But she definitely did not make it back in the boat on the first attempt.
You can pretty much bet that had she been injured, she’d be suing - probably saying “There should be restraints on the ride so I couldn’t have jumped out!” or something equally lacking in any personal responsibility.
From what I read (unconfirmed), she got off and headed to Soarin. Nothing happened to her. I suspect they have cameras watching the boats, but perhaps could not get security to the ride before she got off.
