Hi. Someone gave me large grocery bag of lemons. I bought a cheap juicer and made some lemonade. How long can i store lemon juice in the fridge?How long in the freezer?

If i make strawberry lemonade do i blend the strawberries in the blender or just sliced it up and dump in lemonade?

I plan on buying some shrimp and salmon so i will use 2-3 lemons on that. What else can i do with lemons??? Most of it will go to make lemonade so we will save $$$ on drinks.

Not really sure how long you can store lemon juice in the fridge. I'm assuming a while though...The freezer I would guess several months!

For strawberry lemonade you could do either of the ideas you have. You could also blend the strawberries with some ice and then add the lemonade!

Other ways to use lemons: make jam with lemon as the base (it's super easy). There was a good recipe on the oprah website for strawberry lemon marmalade...no boiling of jars or anything! It was an easy recipe.

You could also make lemon meringue pie or lemon tarts (I freeze the tarts to pull out when I get company!). Another really yummy thing I do is make lemon blueberry muffins for breakfast. I have a specific recipe but as I'm traveling currently I don't have it on me...basically take a simple blueberry muffin recipe, add grated lemon rind to the dry ing. 1 T of lemon juice to wet ingredients. When muffins are done dip the tops in lemon juice mixed with 2 T of butter/marg. and then dip them in sugar.

You can also slice up the lemons and add them to ice tea or a punch or a jug of water for some extra flavour.

I'm going to make lemon bars a co-worker made a few years ago. I didnt think i'd like lemon bars but these were soooooooooo good. The recipe is on Bakerella in the search type in lemon bars.

When I make strawberry lemonade I always mash the strawberries in the bottom of my pitcher with my simple syrup using a potato masher. That way it mixes into the lemonade really well, super yummy!
 

My favorite use for fresh lemons is lemon curd. It is delicious between cake layers or on scones or I'm getting ready to have some on pancakes for breakfast. The basic recipe in the Betty Crocker cookbook is delicious. I think it uses the juice and zest of 5 lemons, so that would use up a few.
 
You can also preserve whole lemons in salt in a large preserving jar. You can then add the sliced preserved lemons to stews (like tangines) and roasts. Preserved lemons are an acquired taste, but quite delicious.

You can brown the meringue (white stuff on top!) in the oven. Lemon meringue pie is not hard. I use a Pillsbury frozen crust and then make the custard from scratch....I use the recipe from my Betty Crocker cookbook. Meringue is just egg whites whipped with some sugar. I would do it in a mixer unless you have biceps of steel.

In the oven is easy, thanks for the tip. The recipe does sound easier than what I was imagining-lol!

Ok, does anyone have a site that has the betty crocker curd and meringue recipe??? I dont have the recipe book but sounds like one I will have to get.

•1/4 cup minced onion or shallot
•3 cloves garlic, crushed
•1 tablespoon butter, melted
•1 (8-ounce) carton sour cream
•4 tablespoons freshly grated Parmesan, divided
•1 tablespoon milk
•1 3/4 teaspoons lemon-pepper seasoning
•1/4 teaspoon salt
•1 tablespoon fresh lemon juice (about 1/2 medium lemon)
•1 whole lemon, zested
•2 tablespoons freshly chopped parsley leaves
•2 tablespoons freshly chopped chives
Directions
Cook linguini according to package directions. Drain and keep warm.


In a skillet, cook onion or shallots and garlic in butter, stirring constantly until tender, not brown. Stir in sour cream, 2 tablespoons Parmesan, milk, lemon-pepper, salt, lemon juice and lemon zest. Cook for about 1 to 2 minutes. Remove from heat and pour over linguini. Toss gently, adding chopped parsley, chives, and remaining Parmesan. Serve warm.

I am a lemon freak! I use it in a TON of stuff...

lets see... rub some on your hand and then over a piece of stainless steel to get the garlic smell off your hands(I use my kitchen faucet)

I put in chicken soup a lot

I use it to keep things like bananas(I can NEVER spell them...and I'm college educated :lmao:) and apples from browning in fruit salad

I quarter them and put them in the cavity of a roasting chicken

Lemon juice...olive oil...salt and pepper...marinade/salad dressing......

You can do a LOT with them...I even use halved leomons to clean things like the inside of my microwave

I have to laugh I quickly glanced at the title of the recipe and i thought it was lemon meringe. I read the recipe and saw onion= yuck what kind of recipe is this-lol! I went back and looked and thought oh i read it wrong-lol!

sound yummy for salad dressing. I dont use olive oil so how much olive oil to lemon juice??


BTW- I have lemon bars in the oven as I type-lol! It was a busy day so we got home late. I figured why not make some . If dh likes the bars then I'll be happy. Maybe I'll take some to BIL party tomorrow.

Do you have a garbage disposal?Use the juiced halves to clean out the disposal-just put them in with water running and turn the unit on.Smells great!:thumbsup2

Yes, I've done this. Dont you just love the smell of lemon in the kitchen. Smells so good and clean.

Well I've made lots of lemonade, some lemon bars and now i just have 1/4 of the bag left. Nextweek I might get another bag. The lady has a hugh tree with lots of lemons. The branches are breaking from so many lemons. She's been giving them away but she said she has tons left.

I make lemon pie but without the meringue, it tastes great. You can add whipped cream if you think you need something else but honestly, I get tons of compliments on just plain old lemon pie. :)
Lemon chicken, I do it in the crock pot with 2-3 halved lemons, just put the chicken in with a bit of pepper, squeeze the lemons, add a little water, you don't need much, a bit of sugar (about a tablespoon) and then the squeezed lemon halves, cook it up and YUM!
