We are going down in November, staying moderate, and have free dining. We are staying 8 nights. There is a child staying in our room that will only be down there for 5 nights, so we will have left over meal credits. What can we do with them? They will be child credits so I'm not even sure we can do anything with them?

I may be wrong, but I think the QS credits are just QS credits and are not designated as child credits. I think you are supposed to use them that way though.

When we've had leftover credits, we either bought things for the trip home with our QS credits and/or given them away. We asked a CM if it was all right last year to give them away, and he allowed us to. I'm not sure how this would work now that everything is on the MB though!

Are you on the regular dining plan? If so you will only have one QS and one TS per day. You can use the 3 extra QS for breakfast or whatever meal you will be "skipping". You can get packaged snacks (especially easy at the resort store and Goofy's Candy Kitchen) that are easy to transport home for the extra snack credit. As far as the TS I am not sure of that answer.

I think you're probably just going to lose the child credits unless you have more than one child on the plan. You could schedule an extra TS on one of those days they will not be there and use the child credits for those who will be and pay OOP for the adults. Some less expensive places to do this would be Via Napoli, The Plaza, Liberty Tree Tavern.

Since it is free dining, I'm not sure I would worry over it too much.

We had a single leftover TS credit at the end of our trip and we were allowed to convert it into a certain number of snacks, I forget how many, at the QS location at CR. We took home quite a few Mickey Rice Krispy treats...

My DH and I purchased kids QS breakfast meals out of pocket at our resort food court each morning. They were good and pretty filling. If you don't have breakfast plans, you could always use the extra credits for that.
