I have to have foods with low potassium in them and there are so many everyday things that you wouldnt even think of having it does...Im limited to what I can eat and potatoes (which i love) is one of them...however, I can eat them prepared fried, roasted, boiled, mashed, etc...as long as they are leeched first..which basically means soaked in water for a minimum of 2 hours prior to cooking...if i am going to a sit down restaurant (not talking about buffet) and I know ahead of time that I want something that has potatoes and I call the restaurant, will they do that for me???

Chefs at table service restaurants should be able to do this when you have an ADR.

If you contact the restaurant directly, the chef may be able to accommodate you. Make sure you DO make ADR's and keep them... that's the only way they will know you are coming.

If your budget applies, Your other option is to stay in one of the accommodations with a kitchen. there are the One bedroom DVC villas (which you can book through a travel agent or central reservations) Those villas have a kitchen. The cabins at Fort Wilderness also have full kitchens.

Good luck!!!

1) If possible, WDW accommodated allergies and special diets.
2) The leeching depends
. . . willingness of the chef/cooks
. . . availability of space in the kitchen
. . . open time
3) But, calling 24-hrs in advance will let you know.

NOTE: A guess, and only a guess, I'd say at least 50% can help.
Knowing the kitchens the way I do, many are limited on space.

thanks everyone..because i basically will have to decide what Im going to eat prior to going to each restaurant, I will call the restaurants in advance and ask:goodvibes

Not sure how well it will do calling them. Most guests who call restaurants have to wait for a call back, and then get discouraged when it doesn't come. Make sure you put it on your reservation in detail what you need, and get in touch with Disney special diets. This isn't something they can help you with at the time you arrive at the restaurant, as they would have to start preparations for you hours before you even arrive, so make sure you follow up with Special Diets.

My experience has been that over the past couple of years I've had many promises made by chefs that simply don't happen. Chefs bend over backwards for our numerous alleries when we're at the restaurants but they don't typically do any prep ahead of time in most cases. The exception is chefs at our own resort. We tend to eat quite a bit at our resort so the chefs there tend to prepare things ahead of time for us. IMO that's where your greatest likelihood of getting potatoes prepped would be. I've also read good things about people who have ADRs popping into restaurants several hours before their ADRs to ask about specific foods when they have complicated dietary needs so you can always try that for park ADRs if you'll be at the park several hours before ADRs.

I'm not saying to not contact Special Diets. DEFINITELY do that and also mark every ADR as having special dietary needs. I just want to give you a realistic idea of what to expect.

This sounds like something a little too far out from a normal allergy situation.

I see at least two issues.

1. Someone would have to personally take charge of your ADR. I can't think the system is setup to alert someone 2 hours in advance that they need to start soaking your potatoes.

2. While the Kitchen staff is trained in the proper safe handling of food and most likely has some sort of training on how to handle food allergies, I don't think they are going to get any training on how to properly leach potatoes as part of a low potassium diet. What if they don't do it right and you get sick? Are they now liable for not following your procedure? There also may be health code issues, while you are fine leaving them on the counter to soak, there maybe a regulation that all cut potatoes must be cooled to x degrees within x amount of time, does this effect the process?

I know this sounds a little simple but could you maybe just not order potatoes? :)

I have to agree with this. I think you'e going to have to skip the potatoes. It's just not reasonable to expect a restaurant to do this.
