Leaving Epcot for a 1900 Park Fair Dinner

We are planning on being at Epcot first thing for the Princess Breakfast in Norway and then spend the day. Is it unreasonable to think we could leave on the Monorail for a 5:30ish dinner at the Grand Floridian (1900 Park Fair) and then return for Illuminations?
