I completely understand how frustrating it is, but it's brutal at the moment....especially in the US. :sad2: I'm completely with you about online. My mum has come to the understanding that's how it's done...so I'm not dealing with that thankfully. Of all things to deal with....for your dad to be telling you off about that? :confused3

I've been through hell with my mum....she is a pit bull and would do 'anything' for me and my education. Always wanting me to have the best etc. And I KNOW my parents did a lot for my brother an I......trust me I know........I get reminded.....
But it was so much what she wanted I've landed somewhere I never saw coming. She's a wonderful mum in so many ways...such that I get berated about being ungrateful when I dare do something she doesn't agree with...

I too wish I could leave but I simply can't afford this real estate market even teaming up with my friends who also desperately want to move out. I need to get a solid permanent position step 1..... :rolleyes1

I liked it well enough. Certain parts could have been better, but the part I wanted to see the most was still there and that was what I really was waiting for.

I'm just tired of looking. I can't get people to even look at my resume. And when I do get an interview, it doesn't matter that I have a completely wide open schedule and am willing to take minimum wage. They just don't want me.

I read some statistics the other day about the job market in the US. Not only is there high unemployment; but for the people who are unemployed, it takes them an average of 40 weeks to find their next job. :eek:

I keep hoping to read good news on the Dis....

Cauliflower Soup


My starting ingredients:

  • Cauliflower, 1 whole head cut into large florets
  • Onion or leek, sliced
  • Potato, 1 peeled and cut into chunks
  • Curry powder, 1 teaspoon (or cumin power, ½ teaspoon)
  • A piece of parmesan rind, about 1 x 2 inches
  • Stock or water, enough to cover the vegetables
  • Salt and pepper to taste
  • Oil, 1 tablespoon

In a large pot, gently fry the onion or leek in the oil.
NOTE: I prefer using leek as it has a milder flavour that doesn’t overpower the cauliflower taste.

Add the cauliflower florets to the pot and fry for another 2 – 3 minutes.

Add the spice and fry for another 1 – 2 minutes.
NOTE: If you are using potato, then add the potato at this stage. The potato acts as a natural thickener; but you can omit this ingredient should you choose to.
NOTE: In the picture here, I’ve used curry powder. But I’ve recently taken to substituting with cumin as I think it complements the cauliflower better than the curry powder. I’ve used less cumin in the recipe as it is a stronger spice than curry.

Add the stock or water until it just covers the vegetable. If you are using the parmesan rind, then add it at this point. The rind will add a light cheesy taste to the stock as it cooks.

Allow stock to boil and then reduce heat to a simmer. Cook for 20 – 30 minutes.

Remove the piece of parmesan rind before blending all ingredients together. Serve with shaved parmesan slivers on top. Enjoy!
