Last minute trip -critique my plan/ tips welcome please

I hope this is the right forum for this - apologies if it isn't (still a newbie.)
I'm taking a last minute 5-day trip to Disney with my college age DD this weekend... We decided days ago when her spring break plans fell through and I scored last minute airfare deals, so I haven't had much time to plan. We don't have any "must do's" on this trip. We last went a dozen years ago and that was a well-planned trip, so this really feels like "winging it."
Here's what I've put together- a few things can't be changed because we are coordinating with other friends who will meet us: Disney Springs on Saturday afternoon, and an Epcot resort area lunch on Monday.
Here's our plan based on availability etc.. (I figured we'd try and fit in a few shows etc, but didn't FP it.)
Sat - arrive via magical express at ASM.
Lunch at Frontera Cocina (Disney Springs)
Head to MK - FP @5:30 Buzz, then over to Adventureland for FP at POTC and Jungle Cruise - fireworks
and then to hotel (if we last that long!)
Sun- AK early (have FP for Safari soon after opening, but we'll see?) noontime FP for Dinosaur, then KRR -
back to hotel and either back to AK for River of Light (if we feel up to it.. otherwise, poolside movie.)
Mon- Epcot. A few FP between 9:30 and 11/11:30 - boat to Captain's Grille early lunch, then back to
World Showcase.. FP for Soarin on way out in the late afternoon if we don't get there early-
maybe Garden Rocks early concert?
Dis Springs evening or Epcot illuminations.
Tues- pre MK breakfast at Kona. nostalgia FP rides.. 1 late morning FP at Small World, then lunch at BOG (score!) then PPF.
We may hang in park til late (Night FP at SDMT.) If not, we will head back and hang out at ASM
or bowling and/ nightlife at Dis Springs.
Wed- checkout- tentative plan back to MK for a few morning FP, then possible late afternoon character buffet at Crystal Palace before heading back to ASM for trip to airport. (We could do a different park/we
aren't "wed" to that plan.)

So, is that a "do-able plan this time of year? Anything we should plan or change? Thanks so much!

When it comes to AK, I would suggest squishing the fastpasses as close together in the morning as possible, so that after you finish your 3rd you can get a 4th. Also I wouldn't FP Dinosaur IMHO. I've never had a fastpass for that ride and have never waited more than like 15 minutes. I'd suggest Expedition Everest in its place if you are coaster people, if not, adventurer's outpost is the only place in all 4 parks to get a pic and meet minnie and mickey at the same time. Also I highly recommend Tusker House for lunch, also IMHO the best character buffet in WDW, especially if you don't mind a late lunch like 2:30. There aren't many people in the restaurant so you get a lot of character attention.
 
Thanks MT, The Tusker House lunch is now close $50 per person, plus tip, so it's probably too much for my budget. I am really disappointed with the lunch price increases in particular. Thanks for the suggestion though, I will look into it.

Sounds wonderful. I would arrive early to each park (45-60 minutes early for MK). Only 15min for AK.

Use touring plans on easywdw as a guide. Except rope drop both Test Track and SOARIN on your Epcot day.

I am an illuminations fan and would be there instead of Disney Springs. However you know how to have fun in your own way.

SplashMo, I have been going back and forth with that too, but we want to see Beauty and the Beast before going to BOG.

With the increase in meal prices, I am rethinking my decision not to get the Dining Plan - can I still add it even if I bought tickets and hotel separately?
 
ok, answered my own question. Lol! I called and I could have added the DDP, but they would have either charged a $50 change fee or I had to rebook with the DDP, and that would have meant paying in full because it's so close in time. I decided to skip it.
 
I have found that the DDP coast more money then going without it. I think you have made a good chose. and I agree I would try to have your FP for AK close together I think the safria could be a walk on if you do it first thing.

Make sure you have the My Disney Experience app on your phone - you may be able to move up some of those later FP+ (SDMT and Soarin') the day before or the day of. Then you can also book additional FP+ after you use the three original ones in the parks.
