What time should we plan to leave Kidani Village to take the bus to MK to get there around 8:40?

Same question about getting to Epcot.

I'd allow 45-an hour to get to a park if taking the bus.

I would be at the bus stop no later than 7:15, to be honest. The Kidani bus will stop at Jambo before leaving, and it's about 25 minutes from there to MK and about 20 to Epcot. Add in "time to next bus," and you'll want to be at the stop by 7:15.

7:40 (1 hour) should allow plenty of time. The stop at Jambo is on the way out and takes only a few minutes, btw.
