I need a kick butt lasagna recipe to make while DH's friend is staying with us.
I need it by tonight :teeth:

He's coming into town tomorrow morn so they can golf and I'd like to make a decent dinner (he's not married and doesn't cook).

Jenny's 5 Cheese Lasagna

Sauce
2 cans crushed tomatoes
1 sm can diced tomatoes
1/2 c red wine or balsamic vinegar
Basil..I use fresh basil
Oregano
Mushrooms
crushed red peppers (pinch) (optional)
sliced black olives(optional)
3 Bay leaves...Remove before serving
1 pound GB
3 links hot italian sausage
garlic 3-4 cloves diced

Cheeses
Parmesano reggiano
Ricotta
mozzarella
Provolone
pecorino
2 eggs

Lasagna noodles


1 I cook the sauce all day ..Put crushed tomatoes,diced tomatoes, Red wine,crushed red peppers, basil, oregano, black olives,and bay leaves in crock pot or pan Let it simmer for at least 4 hours.
2 In a small amount of olive oil brown mushrooms , garlic ,sausage and ground beef
3 Add to crock pot sauce...Let simmer another hour or 2
4 put on a pot of water to boil
5 Mix ricotta cheese with eggs,I use a large ricotta cheese..I also add some more diced,fresh basil to this cheese
6 shred other 4 cheeses
7 Place 6-8 lasagna noodles in pot of boiling water
7..Lay out a sheath of aluminum foil and spray it with Pam
8 Put a thin layer of sauce in the bottom of lasagna pan (I'm lazy and buy a disposable one from the store..No cleaning)
9 Remove the pieces of lasagne when they are only half cooked and place them side by side on the aluminum foil.This keeps them from sticking and lets them cool quickly so you can handle them
10 put 6-8 more lasagne noodles in pot
11 place 3 or 4 lasagne noodles in lasagna pan...Remember,they will expand.
12 put a layer of sauce over noodles(keep and eye out for the bay leaves) put another layer of noodles..Put half the ricotta cheese on this layer, add 1/3 of the other cheeses,using some of all 4 cheeses)
13 remove next set of noodles,place one final layer of noodles into boiling pot and repeat steps 11-12
14 put very last layer of noodles on top and cover with sauce
15 place in 350 degree oven for 45 minutes
16 remove lasagne from over and place one last thick layer of 4 cheeses on top(no ricotta this time) bake 15 more minutes
17 Let cool for 10-15 minutes before serving or it willfalll apar

Your lasagna should be layered as follows
sauce
noodles
sauce
noodles
cheese
noodles
sauce
noodles
cheese
noodles
sauce
cheese.Last 15 minutes
 
Fool proof and EASY. -Instead of regular lasagna noodles, make up Mac and Cheese and put it in every other layer. Bake 350' for 20 minutes.
 
Here's mine:

1 lb ground turkey
1 lb sweet turkey sausage
32 oz spaghetti sauce
1 lb mozerella
2 lb ricotta
1 lb package of mixed cheeses (either use the mexican or pizza kind)
1 package of ready made noodles (this saves time from having to boil it)
italian seasonings
salt and pepper to taste
1 tbsp sugar (the sugar keeps the sauce from being tart)
2 eggs

Ground your meat and cook the sausage.
Shred the cheese
Let the sauce simmer and add your seasonings
Drain the grease from the ground turkey and add to the sauce
Once the sausage is done, cut up and add to the sauce
Mix the eggs in the ricotta
Once the sauce has the desired flavor, you're ready to layer it
Turn the oven to 350

Using a large glass dish, place the noodles on the bottom. Add a layer of your meat sauce. Then add a layer of ricotta. Then add your mozerella, and then your other cheese. Follow again using the noodles. Let bake for about 30 minutes until the cheese is melted on top. Let stand for about 10-15 minutes before serving.


Turn the oven to 350
 

Here's mine:

Step 1: Preheat oven
Step 2: Insert frozen lasagna into oven
Step 3: Follow directions on box
 
Use any of the recipies above but add 2 glubs of wine to the sauce as you simmer it.

How much is a glub you ask - well, you open the wine bottle and begin to pour it into the sauce and listen carefully. It makes a "glub" sound as it comes out of the bottle. Two glubs is all you need in the sauce; then pour a couple glubs in a glass for yourself. :drinking1

sorry - I saw red wine vinegar - and I won't drink red wine vinegar - lol

Iusually use red wine, but in a pinch I will use red wine vinegar
 
There is ALWAYS a pan of lasagna in my freezer. it's my secret weapon. emergency don't have time to cook for company dinner. add a loaf of crusty bread, a bag of salad with homemade vinaigrette and a bottle of wine.

Sauce

1 lb. ground meat (I like hot Italian sausage, mom uses hamburger, combo is fine, so is sweet Italian sausage if you can get it. it's hard to find here :confused3 )
2 tsp chopped garlic
2 14.5 oz cans petite diced tomatoes
12 oz tomato paste
8 oz tomato sauce
1 Tbsp dried parsley
1 Tbsp dried basil
1 tsp salt

brown meat in large pot, add garlic. then add rest of sauce ingredients and let simmer for an hour or so. the glug or two of wine mentioned above doesn't hurt either!

8-10 ounces Lasagna noodles, cooked al dente. I've tried the no bake, and don't like them. my recipe doesn't have enough liquid to use the no bake.

cheese filling

24 oz cottage cheese. yes, I hear all you east coast Italians gasping. this recipe is from way way back when, before you could get ricotta in the grocery store here in Iowa. Every now and then when I was a little girl, we'd get some at the Italian deli downtown, but it was pricey.
2 eggs
1 tbsp dried parsley
dash salt
dash pepper
1/2 cup grated parmesan - please don't use the cardboard powder in the green can

combine all cheese filling ingredients

1 lb mozzarella, sliced thin. shredded is ok, but sliced is easier to work with


spray bottom of 9x13 pan
layer 1/2 of noodles
1/2 of cheese filling
1/2 of mozzarella slices
1/2 of meat sauce
repeat layers

bake 350 for 25-30 minutes until hot through. let stand 10-15 minutes to set before serving.

I usually make this in 2 11x7 pans, cook one fresh and freeze one. If I need the entire 9x13 pan for company, I make a double batch and freeze 2 11x7 pans. it's no more work to do a double batch than a single, and I hate to go to the work of putting it all together and not getting a spare meal for the freezer.
