3 nights - how will you ever fit everything in? You'll just have to go back!
For good meals I suggest the following:
Buffets - Aladdin for dinner (fantastic - highest rated buffet in Las Vegas) and Bellagio (also fantastic, but more expensive). And the Paris buffet for breakfast, nothing like made-to-order crepes!
Steak - Emeril's Delmonico restaurant is outstanding. Reservations are required, and they do have a dress code. Service in amazing though - true story: Went in 2001, took my mother to Delmonico for Thanksgiving (US) dinner. I needed to use the restroom during dinner, I must have looked a little lost because the head waiter took me by the arm and escorted me to the hallway where the restrooms were - thankfully he stopped there, I thought he was going to take me all the way inside! When I returned to the table I told my mother where the restroom was, and she made her way there. Not 30 seconds after she got up a waiter (not ours) came over and folded her napkin neatly on the table. A minute later our waiter passed by, noticed that my mother had gone and !horrors! someone else had folded her napkin! He rushed over, snapped it out and then carefully refolded it and placed it on the table again. BTW the meat was the most tender, wonderful steak I have ever had. It was the way you always hope that a steak will be when you order it, but never is. But this was.
For another good steak experience, not quite as good and not as posh, try the steakhouse at Circus Circus named, appropriately enough, The Steakhouse. Okay so you have to walk through hoards of kids running around to get to it, and put up with the Circus Circus decor on the way there, but the steakhouse is nothing like the rest of the property. Nice decorated with lots of wood, the food is more than decent and the prices are very good.
If you're looking for something a little more unusual, try Marrakech. Typical Morrocan food with belly dancing, set menu.

For an unsual drink, get the Warp Core Breach at Quark's. Just make sure you're not driving anywhere for a while afterward. OH, and remember that your ticket for the Star Trek Experience is an all-day ticket, so you can ride again as often as you want. Makes the steep price a little more bearable. But there is a Star Trek convention at the Hilton starting on the 29th, so it might be a little crowded (3,000 attendees expected).
The new monorail is up and running. Prices are $3 one way, $5.50 for 2 rides (one round trip), $20 for a 10 ticket pass, $10 for a 1 day (technically 24hr) pass and $25 for a 3 day (72 hour) pass. Their website is at

I can't go to Vegas without spending time at the Secret Garden at the Mirage. I frankly don't see the other animals in their little zoo any more, I spend all my time with the dolphins. No shows, just observation.
If you're looking for free stuff, the Monte Carlo has a free slot tournament every day.
The Aladdin has an almost-free tournament. It costs $25, and in addition to the tournament you get $10 in play on select machines in the casino plus a gift of your choice from their case. Among the many gifts are a free buffet (which we took the first time) and a denim jacket, which I've taken every time since. I figure since the Aladdin will become Planet Hollywood before too long it's nice to have something with their logo while they're still around. First time I did the tournament and took the jacket, I also cashed my $10 in free slot play out for $15, so the jacket ended up costing $10. If you get over a certain number of points in the tournament then you win cash. The top winner of the day gets a spin on every dollar machine in the casino.

And it looks like you're just missing the Delta Sigma Theta Sorority convention, with 150,000 attendees. They're there from the 23rd-28th.
