I worked at Kmart in the mid and late '80's ... started in the full-service restaurant (Brighton, MI) and moved to the deli when I turned 18. I'm more than happy to share the recipe for their subs! It's here on my food blog:

All the veggies were sliced on the big slicer in the morning before the store opened. Having the lettuce thin is also important. I made these subs for years there...they only had bologna, cotto salami and the last meat was never labeled - ever. We jokingly called it "mystery meat" because of the lack of label. Today you can use old fashioned loaf or dutch loaf - they're all about the same. The link above is for their Super Sub, it had twice the meat, a chewy roll and shaved ham. For their classic sub just use a soft 6" sub roll, half the meat and omit the ham. Easy peasy.
We sold bags of ham and cheese sandwiches on burger buns - ham & cheese 4/$1.50, chopped ham & cheese 4/$1.00. We made ham & cheese platters by the hundreds every May, June and July.
As for the apple dumplings??? They came in frozen and were baked on-site. The white sauce was melted vanilla ice cream, slightly warmed.
The secret to their AMAZING onion rings and fried fish??? 12 cans of Red, White and Blue beer, opened and poured into a 5 gallon bucket and left in the refrigerator overnight to "stale" without a lid. The next day, pour in a bag of Drake's Batter Mix (
http://www.drakesbattermix.com/), the big bag. Then gently whisk until smooth. The onions were always HUGE and sliced 1/2" thick on the slicer then separated into rings, dredged in dry Drake's Mix then dipped into the wet mix and deep fried. Dredge the fish in the dry mix then wet before deep frying also.
Our deli served the best fried chicken I've ever had (considering KFC was literally located in our parking lot, that's saying a lot!). We thawed bags of frozen chicken pieces in buckets of hot water - VERY HOT WATER. Then dredge in flour with salt and pepper, and deep fry until done. Breasts first, then thighs, legs and wings.
We had pizza snacks (made with lard) that were the bomb-diggity. Nachos with regular and spicy cheese - canned cheddar cheese sauce mixed with jarred jalapenos and some of the juice.
They did have THE BEST POPCORN in town...and Icees...and the soft pretzels are the same ones you can buy in the frozen food section now. Spritz the frozen pretzel with water and dip the top into the salt and bake.
