I've collected a couple - but haven't made any of them.
KEY LIME PIE
Dixie Landings - Port Orleans
1- 14oz Can Condensed Milk
4 Egg Yolks
3- 4oz Key Lime Juice (depends on taste)
4 oz. Heavy Cream
1 9" Graham Cracker Pie Shell
1 ea. Lime (sliced thin)
1 pt. Whipped Cream
1.) Combine condensed milk and egg yolks in mixer and blend well. Add Key Lime juice and blend well.
2.) Add heavy cream and mix well.
3.) Pour into Graham Cracker Shell.
4.) Bake at 350 degrees for 10 to 15 minutes. Remove from oven, cool.
5.) Top with whipped cream & lime slices Yield = 1 - 9" Pie

Key Lime Pie Recipe - a la Emeril
I just attempted making the Key Lime Pie from Emeril's show after I saw it this weekend. I cheated a little though. The quick way is, get a ready made graham cracker crust. The mix is as follows:
2 - 14 oz cans of condensed milk
1 cup Key Lime juice
2 eggs
Whisk the 3 ingredients in a bowl until combined, then pour in the crust and bake at 325 degrees for 15 min. Put in refrigerator for at least 2 hours. Then top with whipped cream or whatever. His recipe on the foodtv.com website actually included making the crust and a sour cream topping, but I just did the basics and it is sooo good and easy!

Here's another one.
Use 8oz cream cheese, 1 small can of condensed milk and mix together until smooth.
Add 8oz container of Cool Whip and mix.
Add 3 oz of lime juice and mix. (or to taste)
*optional - mix in green food coloring.
Freeze.
Thaw out about an hour before eating.

Key Lime Pie
graham cracker crust
1 small can Sweetened Condensed Milk
1 8 ounce package of cream cheese
1 small container of Cool Whip
about 2 ounces of lime juice
Mix together the condensed milk and cream cheese, until really smooth.
Add Cool Whip, mix.
then add the lime juice to taste.
Scoop it into the crust then, freeze it.
When you are really to eat it, it needs a couple hours to unthaw, or you don't have to wait, just eat it frozen.
We've used lemon juice, and strawberries before. It all takes good.
