Key Lime Pie

Oh, look what I found! Forgot I had this.

Chocolate Crusted Key Lime Pie
from Grand Floridian Cafe
Yield: 10 servings
Crust:
1/2 cup sugar
1 stick butter
1 egg
1/4 cup cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups all-purpose flour
8 ounces raw rice for baking pie shell
Filling:
14 ounces sweetened condensed milk
4 each egg yolks
1/2 cup key lime juice
Garnish:
Fresh sweetened whipped cream

1. To make crust, mix sugar and butter until creamy. Add egg and mix.
Sift cocoa powder, baking powder, baking soda, salt and flour (except rice). Add to mix.
When all is combined, place between parchment paper. Flatten slightly and chill 1 hour.
Heat oven to 350 F.
Roll dough to 1/8-inch thickness and place in pie pan or tart pan.
Cut circle of parchment large enough to cover bottom and sides of dough. Place paper on dough. Place rice on paper.
Bake 10 minutes.
Remove parchment and rice, Bake for an additional 10 minutes.
Let cool.
2. For filling, combine milk and yolks on low speed. Slowly add key lime juice while mixing on low until blended.
Pour into crust.
Bake at 350 F for 20 minutes.
Chill until cold, preferably overnight. Garnish with sweetened whipped cream.

Did you like the mango and raspberry sauce as much as I did? Could you eat the whole thing? I sure couldn't. It was really good though.
 
KLP PSA:

Just remember one important rule of thumb: when it comes to Key Lime Pie, if it is green it isn't real. Key limes are not green and neither is the juice. True KLP should be clear/white, not green.

I will also add that we did not think the Flame Tree KLP was very good. Average at best. So many people rave about it, but they must not be Floridians, lol. When you grow up on KLP in every restaurant and store you frequent your entire life, your opinion of mass-produced KLP is somewhat lessened.

I don't think any of the KLP that I ate was green. The closest was the Sunshine Seasons maybe.
 

I went to Starring Rolls and picked up a KLP and two other lovely treats. My daughter was stuck on a ride, so I gave the KLP to my brother who devoured it and begged for more. Because he is 31, I told him to get it himself. So, we missed that pie. We did have a nice little dessert at Hollywood and Vine. It was a teeny tiny little tart with key lime pie filling, whip cream and a mandarin orange slice. The whole thing was about the size of a quarter. BUT let me just tell you that the Strawberry Shortcake dessert at H&V is quite amazing. I ate way too much of that!!! :woohoo:

On our return in July we still have Fulton's, Shula's, Crystal Palace, Cap'n Jacks, Wolfgang Pucks, Beach Club, and Starring Rolls. Cape May has some little tarts too to try, and I will go back to the Boardwalk Bakery to try again for a whole pie.

Now what is this that I hear about Narcoossee's KLP creme brulee???? yummmmm.

Between all this dessert and those Grey Goose delights (and I just read about a Sunken Treasure) my week in July will be full without even going on any rides. ;)
 
I actually think the Key Lime tart at Sunshine Seasons CS is the best I've had on property: light and topped with merangue and with great flavor!

You can get it as a snack option on DP as well!:flower3:
 
Apparently Shutters has a Key Lime Pie not on my list. Anybody try that one?
 
I love Key LIme Pie and wonder if anyone has had the Key Lime creme brulee at Narcoosee's? I was looking forward to that this coming trip.
How about this:

CHEESECAKE FACTORY KEY LIME CHEESECAKE

1 3/4 cups graham cracker crumbs
5 Tbsp. butter, melted
1 cup plus 1 Tbsp. sugar
3- 8oz. pkgs cream cheese, softened
1 tsp. vanilla
1/2 cup fresh lime juice (about 5 limes) If using key limes or juice, use half
as much.
3 eggs
whipped cream
Preheat oven to 350*. Combine crumbs, butter and 1 Tbsp. sugar in a bowl. Stir
well to to coat all crumbs. Keep it crumbly. Press the crumbs onto the bottom
and half way up the sides of an 8" springform pan. Bake crust for 5 mins.and
set aside.
In large bowl combine cheese, 1 cup sugar and vanilla. Mix with electric mixer
till smooth. Add the lime juice and eggs and continue to beat till smooth and
creamy.
Pour filling into crust. Bake for 60 to 70 mins. If top is turning light brown
it's done. Remove from oven and allow to cool till room temperature. Put into
fridge. When chilled, remove the pan sides and cut. Serve with whipped cream.
I also have the recipe for their pumpkin cheesecake. Let me know if you want it
and i will post it.

DH and I had the Key Lime creme brulee at Narcoossee's last August, it was tart and very yummy!!!! DH will not eat Key Lime Pie, I was fighting with him over this desert.
 
I live in South Florida and key lime pie is my favorite!

The key lime pie at Sunshine Seasons is a very good dessert but it is not traditional key lime pie. It is more whipped, light and airy. Not thick and creamy like the traditional kind. It's good - but definitely not real key lime pie.

Well... which one at Disney is the best then? Have you tried the one at Grand Floridian Cafe? I like it!!!!!!
 
BCrook, did you eat at the GF Cafe recently? I am just curious as seriously that tart was so small, that we all laughed about how they could possibly call it a pie slice. It was not even in a pie slice shape. I did not care for the carmelized sugar on top of it either, made it more of a brulee than traditional Key Lime Pie.

It is the tart that comes off the Dessert Sampler. The GF Cafe used to have a wonderful pie that sounds like what you are describing but they do not offer it anymore.

Also if you get the sampler it comes with 4 mini desserts including the Key Lime tart and it is a much better bargain money wise.

Size wise it sounds just like what you described at Hollywood and Vine. I hope you have been since me which was in March, because I hope they bring the regular pie back to GF Cafe, it used to be great.
 
We ate that GF Cafe on June 1 (a couple of weeks ago). We ordered the Key Lime Pie dessert and we got a small but adequate piece of pie. It had a chocolate crust, wonderful key lime filling, and a triangular piece of dark chocolate on top like a flag as a garnish. There wasn't any caramelized sugar on top. It was at least five times bigger than the quarter-sized tarts at H&V.

I think Ozziewags recipe on page 6 is the recipe. Except I don't remember the whipped cream - just the chocolate piece on top.

We really enjoyed our entire meal at the GF Cafe. We are going back in a few weeks and I am regretting not getting ADRs there again. I hope maybe we still get in at some point.

My big challenge is getting a piece of Key Lime Pie from Shula's without ordering dinner. We will see how that works out... We might need some magic. :wizard:
 
We finally made it the Keys This summer to try the key lime pie there. Kermits in Key West was really good, but the Grand Floridian Cafe's was better. A restaurant in Key Largo, the Sundowners, has the very best key lime pie out all that we tried.

I am looking forward to two weeks at WDW next summer to try all the pie again.

Ppffff, the blond Giraffe is a joke. They DON'T use Key Limes! Note: In all seriousness, their pies are REALLY good, but they aren't KEY LIME pies.

My wife makes the best. Yes, we live in the Keys and her pies are made from the Key Limes from my trees and you can't buy one commercially yet (I keep trying to talk her into going "commercial" though).

True Key lime pie IS tart and light yellow. The wanna be's out there, including those shown on Adam Richman's Man V Food are simply commercial pies. Come to the Keys and get a local to make you one! THAT , you'll never forget!
 
We visited the Keys in June. The Blond Giraffe shops have all closed. Duffy's Steakhouse served a very good key lime pie. We had to ask the chef about ingredients, because of my kids allergies. They make it from scratch every day. It was pale yellow with a delicious buttery graham cracker crust and real whipped cream on top. Yum!

The Blond Giraffe, just like most of the other restaurants in the Keys get (got) their pies from The Key Lime Pie Factory - Duffy's does not. I don't know whether theirs are authentic "Key" Lime Pie or not.
