I already make a good Key Lime Pie but would love to have your recipe for the cookies! They sound really good!!!!
Sure I'd love to say it was my grandmothers secret recipe but truth is I got it online few years ago. It's a light cookie and great for summer time. Here it is:
Ingredients
1/2 cup butter
1 cup white sugar
1 egg
1 egg yolk
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup fresh lime juice
1 1/2 teaspoons grated lime zest
1/2 cup confectioners' sugar for decoration
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream butter, sugar, egg, and egg yolk until smooth. Stir in lime juice and lime zest. Combine the flour, baking powder, and salt; blend into the creamed mixture.
My tips
Now I usually put the dough in the freezer for at least 45 minutes. The best batch I've made I kept the dough in frig all night. So I can better handle the dough. It's too sticky. I also used my cookie scoop to "drop" the dough on to the cookie sheet (or use ziplock bag to sqeeze out). You can also drop the dough onto a plate of powdered sugar and then it is very easy to roll. Lastly, you can just use key lime juice if you don't want squeeze the limes - I usually do.
Back to the recipe
Form dough into 1/2 inch balls, and arrange on the prepared cookie sheet.
Bake 8 to 10 minutes in the preheated oven, or until lightly browned. Cool on wire racks. Sift confectioners' sugar over cookies while still warm.
