Key Lime Pie

I already make a good Key Lime Pie but would love to have your recipe for the cookies! They sound really good!!!!

Sure I'd love to say it was my grandmothers secret recipe but truth is I got it online few years ago. It's a light cookie and great for summer time. Here it is:

Ingredients
1/2 cup butter
1 cup white sugar
1 egg
1 egg yolk
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup fresh lime juice
1 1/2 teaspoons grated lime zest
1/2 cup confectioners' sugar for decoration

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream butter, sugar, egg, and egg yolk until smooth. Stir in lime juice and lime zest. Combine the flour, baking powder, and salt; blend into the creamed mixture.

My tips
Now I usually put the dough in the freezer for at least 45 minutes. The best batch I've made I kept the dough in frig all night. So I can better handle the dough. It's too sticky. I also used my cookie scoop to "drop" the dough on to the cookie sheet (or use ziplock bag to sqeeze out). You can also drop the dough onto a plate of powdered sugar and then it is very easy to roll. Lastly, you can just use key lime juice if you don't want squeeze the limes - I usually do.

Back to the recipe
Form dough into 1/2 inch balls, and arrange on the prepared cookie sheet.
Bake 8 to 10 minutes in the preheated oven, or until lightly browned. Cool on wire racks. Sift confectioners' sugar over cookies while still warm.

If you saw it on an online menu - they are not always the most current for the restaurants.

Loved it at Flame Tree BBQ in AK, but that was the only key lime pie I ate at WDW, so no basis for comparison. I am also from NYC so I am in NO WAY an expert on key lime pie! But I can tell you this...it had that tart-sweet taste, filling was nice and thick, graham cracker crust and was a nice size piece of pie!
 
I LOVE key lime pie as well, and tried a few on our last trip in Nov. Based on all the reports here, I was so excited to try Sunshine Season. It was horrible to me! It was more of a mousse and a lime flavored pudding then it was a pie. I did not like it at all. I really like Crystal Palace. However the absolute best was from Boardwalk Bakery. Instead of ordering a custom cake, I ordered (for my mom) a 9" key lime pie from the bakery. It was delicious! The best key lime pie ever. I believe they do have tarts there as well that you wouldn't have to order a whole pie.

Such passion! I was getting light-headed just reading this. Based on the pictures, Flame Tree looks really good. Thank you for this report! :woohoo:

Oh My - a custom made Key Lime Pie! Pure Genius! I will ask the bakers at Boardwalk Bakery if they have had a run on custom made KLP since your post when I get there in June! This just kicked everything up a notch.

I think this one is the closest one to an "original" key lime pie.

I absolutely agree with you! I can't believe they have it at the Boardwalk Bakery! I was just there in February and must have not seen it. But, I did have the Cheesecake Brownie!! Oh my; it was also terrific!!! I am so hungry for these wonderful desserts but am dieting at the present time. Can't wait for our next trip!!!!!

Otherwise, go into Olivia's, sit down, have a cup of coffee and you can order anything you want to go. Bizarre, but it works--Jerry, the long time server from Brooklyn who has been at Olivia's for about 15 years--gave us the tip. My tip--find Jerry and he will fix you up with Key Limes to go! We do it every trip.
 
we have had it at Fultons and it was very tart and we didnt enjoy it. then we had some at AK Flame Tree, which was much better:thumbsup2

I thought the key lime pie was very tastey at AK Flame Tree. We also had it at Sunshine Season's in Epcot. That was good, but Flame Tree was better.

Otherwise, go into Olivia's, sit down, have a cup of coffee and you can order anything you want to go. Bizarre, but it works--Jerry, the long time server from Brooklyn who has been at Olivia's for about 15 years--gave us the tip. My tip--find Jerry and he will fix you up with Key Limes to go! We do it every trip.

I am going to like Jerry! Just tried to book dinner at Olivia's but the new system is not smart enough to let me book for my trip in June (staying at Bonnet Creek) because their system only "sees" that I am staying at Beach Club in July. :rolleyes1 The new reservation system is a bit of a mess. So, I might just keep with the Jerry plan and get it to go.

I love the key lime tart at Coral Reef. It was my favorite dessert last year.
I had been wondering where to eat at Animal Kingdom this August. That picture of the key lime pie at Flame Tree just made up my mind. :goodvibes

I love the key lime tart at Coral Reef. It was my favorite dessert last year.

After looking at the pictures, I might have to go back to try the Key Lime Pie. Coral Reef is our family's favorite restaurant at WDW - it shouldn't be hard to convince everyone to go back.
