Kevin once mentioned on an episode that he likes beets. We have a bumper crop coming in out in our garden right now and I was wondering how to prepare them. Any ideas?

Boil them until tender and then serve with butter and salt.

Or even better.....roast them.

Mmmmm! Good.
 

I agree with roasted with a bit of olive oil and salt. Add them to arugula or other salad green and add goat cheese, balsamic vinegar and walnuts. Delicious!
 
Boil until tender, cool, remove skin (it peels off). Salt and pepper good enough for me.

Peel first, oil and grill or roast until tender. Season as you wish.

Once made sauteed beet greens. Once was enough.:laughing:
 
In Australia we slice them and put them on hamburgers. Mc Donalds here even has a MC OZ which has beets on it.
 
Harvard beets...my favorite!

6 med. sized beets
1/2 c. sugar
1 tbsp. cornstarch
1/2 tsp. salt
1/2 c. vinegar
2 tbsp. butter

Wash beets; cook until tender. Remove the skins and cut into thin slices. Mix the sugar, cornstarch, and salt; add the vinegar. Let this sauce boil for 5 minutes, stirring constantly. Add the butter; pour sauce over the beets and let stand for a few minutes to absorb the sweet sour flavor.

LOL! I agree with that! I love greens - kale, spinach, chard... but beet greens didn't do it for me.

Roasted beets & blue cheese on a red leaf lettuce blend or spring mix with balsamic vinaigrette, though? Yummy. =)
 
The absolutely best way to cook beets is to boil them, boil them some more, boil them some more and then through them away.

Borscht? It can be served cold in the summer.
My MIL used to serve whole cooked baby beets (we're talking really small beets--about 1 in. in dia.) with the greens attached. Slip the skins off the beet when cooked, as usual. Just needs salt, pepper and butter. And, it makes the beet greens, so good for you, palatable.
 
Thank you so much!!! You guys are wonderful! What a great response to a completely non-Disney question. I found a recipe in the Joy of Cooking (my go-to cookbook) that involves roasting (separately) fingerling potatoes, pearl onions and beets and then tossing all together with a vinaigrette. I thought that sounded good, too.

Love beets! Thanks to all of you, I will be heading to the store tomorrow to buy beets. Yum!
 
We grow our own beets too and love them roasted.

Wash the beets and trim off a bit of the ends. Wrap each beet in aluminum foil and roast in the oven at 350 degrees for at least an hour. A fork will easily pierce through the beet when done.

We quarter them, put them in tupperware and drizzle balsamic vinegar on them. Store overnight and the next day, they are sooooo good.

Little tip, wear latex (or non-latex if you have a latex allergy) gloves when handling the raw & cooked beets to avoid getting red stains on your fingers.
