Personally I would avoid about the first 6 months to a year on a new ship - let it get the bugs out so to speak.
It's definitely risky booking the very first cruise (either of a brand new ship or a ship coming off an extensive dry dock) - sometimes delays happen, and sometimes things aren't quite ready to go. Google RCCL's Harmony for some reports from their early cruises on a brand new ship or RCCL Empress where the first month or so of cruises after her extensive dry dock to bring her back into their fleet ran over...and reports from the early sailings were that they should have taken even more time.
I get that being the first is exciting...but you have to accept that there will likely still be kinks being worked out while you're on board...
