So, I dried my first batch of Beef Jerky in the food dehydrator last night and it turned out pretty good. But of course, I know that jerky mix is going to most likely be expensive.

Anyone got a good recipe for jerky they've used before?

Soak in teriyaki sauce for a few hours. I've never used jerky mix and mine turns out fine, even plain.

My dh marinates his in soy sauce with cyanne pepper. It makes his jerky spicey hot and we all love it. But he doesn't make his jerky from beef, he makes it from venison.

I use garlic salt and fresh ground pepper. I have tried a teriyaki marinade, which was good, but a little sweet for me. I only use flank steak, sliced WITH the grain, to give it that tough, chewy texture. Yummmm, I need to go dig my dehydrator out of the basement, this is the second discussion I have had today on the subject!!:)

The mix I use isn't that expensive. It costs about $6, but it cures about 10 pounds of meat.

Thanks Big V, I'll have to check that site out.

The jerky I was making comes from ground chuck squeezed through a machine that looks amazingly like a cookie maker. Hence the mix to put in it.

6_time_momma - what is the maker of the mix you use? Is it good?

Ok Jfulcer....here id my "secret recipe". I love my dehydrator but I hate to clean it.

Beef Jerkey:

3 pounds London Broil, freeze for awhile because it's easier to cut than raw!

1 Part Liquid Smoke
2 Parts Soy Sauce
2 Parts Brown Sugar

Here is where you get to be creative: add any or all of the following:

Garlic, I like minced but powder is OK

Cayanne Pepper: if you like it hotter

Tereyaki sauce

Cajun seasoning

(one of my favorites) Curry

I like to marinate at least 24 hours. Dehydrate for 8-15 hours depending on how thick you slice it. I like mine thick so it is normally 12 to 15 hours for me.

Hi Mountain. They have several different flavors, but this is the one I usually use:

Hickory Seasoning

I was wrong, it does 15 pounds of meat....and you can use it with ground meat, too.
