I was wondering the same with Grand Cayman. Is the turtle farm back up and running? It was wiped out with their hurricane.
From what I was told, you have up until two days prior to sailing to cancel any excursions. Book what you think you may want and decide definite later.

Thanks! According to the turtle farm web site (www.turtle.ky), they were back up and running when the cruise ships returned in November 2004.
