January 31 - 5, help me plan?!

Hi!
Coming to Disney December 31.. I know, I know. BUSY! Well, we're skipping the parks on the 31 and 1. Staying at Fort Wilderness and enjoying the campground those days. Any tips or must dos?
Beyond that, I'm not sure which park we should do which day. Any advice?
Jan 2 (Friday), 3 (Saturday), and 4 (Sunday). We'll have 3 day park hoppers. We've been do Disney a lot of times so we don't have to do it all. Planning to buy multi pass for each day. Not sure if we'll do ILL or just rope drop those rides.

We went to Disney this past January. The weather was glorious during our first three days. The temperature dropped to 48 degrees, 52 degrees, and 56 degrees the next three days and then back up to 70 degrees. We had checked the weather before we left and had winter coats, hats, and gloves, but being outside in those temperatures really wore my husband and me down. We were with our kids and grandkids, who did not want to go back to the hotel and warm up, so we stayed (we did leave earlier than they did at the end of the day). Just in case-bring heavy clothing.
