Well--at least not inside the Chef's table dining area. But you will need one to walk thru the main dining area to get to the Chef's table. Once inside, no further need to wear a jacket. Since they do have "loaner" blue sportcoats at V&A, one possible option for those dining at the Chef's Table woud be not to pack your own jacket, and just use their's to get to the table.
Also--a collared shirt is NOT required at the Chef's table.

All of which was verified by Uncleromulus in a phone conversation with V&A staff last evening.

NOTE: There IS a dress code in the main dining room--jacket for men, tie not required. Men taking off the jacket in the main dining room will "probably" be asked to put it back on.

That's interesting. I think it makes sense. You're in your own little domain back there and whether you want to dress casually or in black tie, it won't affect other diners' experience.
