The History of Pork Roll

Although several manufacturers make a generic product named “Pork Roll,” John Taylor’s Original Pork Roll is what most New Jerseyans ask for by name. Made since 1856 it ia a main staple of diners, kitchens, Holiday tables, and boardwalks of the Garden State.

What is the difference between Taylor Ham and Taylor Pork Roll? The proper name according to the manufacturer, Taylor Provisions of Trenton NJ, is John Taylor’s “Original Taylor Pork Roll.” It was originally called “Taylor Ham” and although the name was changed in 1906 many of us in North Jersey still call it simply, “Taylor Ham.” Think of it as Kleenex is to tissues, Taylor Ham is to Pork Roll.

According to Eric of Taylor Provisions, people continue to use the two names interchangeably. We also asked him about Taystrips, or Tastystrios and he said they have not been manufactured for many years and have no plans at this time to do so in the future.

The name debate seems to be between North Jersey locals calling it Taylor Ham, and South Jersey and Philadelphians calling it “Pork Roll.”

I am from NJ, I lived in both south and north jersey. I never heard it called "ham" by any person or restaurant. I currently live in Georgia and buy my Pork Roll in 1.5-3 lb "rolls" then slice on meat slicer and freeze in meal portions.

Growing up it was sliced thicker, fried and put on a nice roll with mustard and sometimes cheese. Currently we enjoy it most as a breakfast meat. My SD will eat it raw ... but then he likes Spam and Scrapple so there is that.
 
i'm from philly but live in south jersey now, my hubby is from north jersey. we both say pork roll because taylor ham is the brand, pork roll is the product

Ahh drove by Tick Tock many times, never stopped. Lived in Montclair & GlenRidge.
Both were better diners in the past anyway. Just checked some of my favorite breakfast spots in Montclair, Raymond’s doesn’t even have it on the menu, Toast is PC. My kids were born at Mountainside hospital and always have to ask me what town they were born in, Glen Ridge because maternity is on that side.

Both my boys were born at Mountainside. The first the ward was only about 8 beds. The second was born in the "new" maternity wing, maybe 20 beds. Yup, it straddles the line.

Then I had my DD in Atlanta at the baby factory - terrifying!
 
Spam is already cooked and can be eaten straight out of the can. Pork roll is perishable and must be kept refrigerated and cooked before eating.
*Can* be eaten straight out of the can, but is MUCH better sliced and fried first. It contains a fair amount of fat and uses a bit of gelatin as a binder, both of which are best cooked off via a very hot dry skillet, which will brown the outside nicely.

I ate Spam for breakfast all the time as a child; you would be hard-pressed to find anyone either who lived through WW2 in the UK or grew up with such a person who hasn't eaten it. (My parents emigrated from the UK in the early 1950s; spam was a treasure there during the War. Americans distributed tons of it in care packages, but even more was cadged from American military personnel stationed there during the war.) Really, Spam isn't bad at all if you're already the kind of person who will eat processed lunch meats like bologna or just about any kind of wurst. (No offense to that kind of person; I am one after all, but some people are just really distrustful of any kind of mixed-meat product that has to be purchased sight unseen.)

Canned corned beef is good the same way, especially served with hash browns.
 
You East-coasters are weird - and I married on of y'all. DW is from Boston. We had food delivered to our DVC one time and she insisted we get Steak-ums

I don't know what that is, but now that I have had a taste I can assure you - it's not steak.
 
Two meat stalls at the LA Farmers Market are selling pork roll. A little overpriced.

That is a good price considering how far it traveled. Around here if you even find it in the grocery deli (RARE) is is around $15 a lb. I pay around $10 lb to have it shipped to me, I buy 3-6 lbs at a time.

Once I was in the grocery and there it was - the lunch meat unicorn. There was a young kid working and I asked how much it was because there was no tag. He looked at it "I don't know it looks like bologna so $3 a lb." :hyper: To which I calmly replied "Ok. I'll take 5 lbs."

I generally only buy the pre-sliced packages. Either 4 thick slices or 6 or 8 thin ones.

Every market around here carries pork roll, Shop Rite, Giant, Acme, etc. i think many even have the humongous 5 pound log.
 
I've never had this before but you all are really tempting me to complete the purchase online with Taylor. Is it really that good?
