Purchase Disney package for 3 day room stay, dining plan, and 3 day park ticket. Use only 2 days of the ticket. Then:
Go on a Disney Cruise.

Then:
Return to Disney World for a separate room only reservation.

Can I use the 1 day left on the 3 day park ticket as long as the time frame is within the 14 days limit.
 
You bet -ticket is good for 14 days from first use I believe. We did this for our cruise & wdw stay in Feb.
 
Yes others are correct, we've done it also we had 3 night free dining package with 5 day park tickets, came back 4 nights later after cruise and had a room only reservation and used our last 2 park days. You have up to 14 days after first use to use your park tickets
 

Yeah, it is a good system because sometimes people like to go shopping, go to other parks, etc. They skip a Disney park day, but you don't have to use the days consecutively. So the 14 day grace period is pretty fair for most people.
 
We have done this several times, it has always worked well. I will say that the FP+ thing is dicey every time for the second park stay. CMs have given me wrong info several times and have NEVER gotten it right. But, my experience is that the FP+ window for the second part of your stay (assuming you go back and stay at a disney resort) opens 60 days from that hotel stay. Meaning you can't book all of them from the first day of your trip.
 
As other have noted, yes you can do that. We have gotten a 5 day ticket, used 1 day before the cruise and 4 days after, no problem at all.
