They won't do it until or unless they're forced to. No matter what Delta is doing, no matter what Florida's case numbers look like overall. Until or unless the CDC says "go back to 6' distancing, regardless of vaccination status" (which they won't do because they want to use the potential for normalcy as a way to entice people to get vaccinated, and because they don't want to be accused of shutting the economy back down), or until or unless Florida says "if you don't increase the space between people, you have to shut down again (HA!), then they won't go back to social distancing. They make more money packing everyone in, and that's their mandate as a publicly-traded company: make as much money as possible for shareholders. It's just the reality of competing interests.
I'm personally just going to keep my fingers crossed that a vaccine comes out for kids before we're scheduled to go so we can avoid severe illness. FL scares me right now. I probably won't cancel, but it's in the back of my mind depending on how bad things get out there.
Not to mention that fireworks will cease and parades won't make a comeback for an even longer time. You can't do 6' distancing and cram the hub full of people hoping to get a good view of Cinderella Castle.
