Is it okay to add 1, subtract 1, or change who's going on a Remy reservation?

I have a sometimes-fussy kid who might or might not be agreeable to go to kid's club, and sometimes-fussier (69 and 70) parents who might or might not feel up to formal dining on the day of the reservation... Would it be acceptable if we reserve for 3 people but show up in 2, or vice-versa? How do they generally handle last-minute change requests?

Depends on what you call "last minute". Here's the cancellation policy:
Cancellations
When Guests have not canceled a dining reservation at Remy at least 24 hours prior to the reservation or do not arrive at the restaurant to honor the reservation, the reservation is considered confirmed and 100% of the per person cost is applied to the Guests' folio.

I would say, if you just show up with 2 instead of the 3 or 4 reserved for, you might get the cancellation charge (for the no-shows). As for just showing up with 3 when you've reserved for 2, I wouldn't do it.

One of the reasons there's such a high cost to a Remy reservation is the pre-planning required for each reservation.
 
Thank you that does make sense, just doesn't make things easier... I was hoping that in practice they might be more accommodating than strictly by-the-book, but looks like I may have to cancel Remy. It's just a bummer as I know my folks will enjoy it - they go to a little local French restaurant for all their special occassions.

It would be great if Palo/Remy has at least one "family" day, even if they stick with the same or similar level of upcharge for the kids - it would still be better than waiting many years to be able to go (I mean me, the little one doesn't know what he's missing out on LOL...)
 
On our first cruise my wife and I had reservations at Palo. When we went to drop off the kids at the club our two oldest went racing in but our youngest (3) melted down. I mean melted DOWN. Screaming, sobbing, not wanting us to leave. It was extreme. I told my wife we would just have to cancel. The CMs at the club would have none of it. They insisted we go - that they could handle it. I argued that it wasn't fair to them or the other kids to put up with it, but they wouldn't budge - "it will be ok and she will be fine- enjoy yourselves." We finally agreed to go but told them to call us if they couldn't get her calmed. We really kept looking at the phone waiting for the call because our youngest just doesn't stop when she's like that.

It never rang.

We called them halfway through dinner and they said she was fine. When we picked the kids up she was tired but otherwise happy. Staff said it took about five minutes after we left to get her back on track, but after that it was all good.

Just saying, they have pretty much seen it all in the clubs and they have a handle on it. You have to decide for yourselves, but I wouldn't worry about missing dinner because your child is fussy. The staff will cover it.

And if worse comes to worse, maybe you can drop your parents off there too :)))
