Yes Fantasmic is every night; during the summer it is twice a night.

There are some rare exceptions where there is an early closing and it is not held.

Yes, it does start when the park closes. I suggest getting there about 45 min to an hour before it starts. Unlike the other shows around WDW (Wishes, Illuminations, the parades), this one you can sit the whole time while you wait.

If there is an early closing for a special function or the weather is bad it might not be held. Otherwise at least one show is scheduled every night.
