Inexpensive meal advice needed (meals for church family)

beef stew and chicken soup are great this time of year and they both freeze well.

My mom also used to make Chicken and Dumplins in the fall and winter (favorite comfort food).

Meatloaf is also good budget wise.
 
Thanks to everyone who responded! You gave me some great ideas for now and for the future. I know my bigget problem with choosing something is that I don't have a lot of confidence in my own cooking, so I don't want to make something that doesn't go over well!

I think I'm leaning toward making chicken soup. I can just pick up a rotisserie chicken and make that into a big pot of soup that will feed the other families plus my own.

I just brought a meal in for a family last week. I cooked chicken in the crockpot with a can of cranberry sauce, mixed this with boxed stuffing and gravy to make a "thanksgiving" cassarole. I served this with steamed green beans (not canned), And a cake I made used boxed carrot cake mix and canned pumkin. Everything turned out great, and it was enough to feed my family too.
 

One time when after I had a baby the church brought in meals for a week, and every single person brought beef stew! =)
 
Honestly, if it were me, I'd just purchase some frozen seasoned Chicken Breasts, a frozen Green Bean or similar casserole, Frozen Mashed Potatoes, and some type of bread, make up a gift box, and be done with it. Cooking for three families is a lot of work! :lmao:

Not to mention everyone has such different taste buds. Or even give them a gift card to Pizza Hut or somewhere they can grab something quick for take out. I know a few people we know have been overrun with things/food when they've had a death in their family. A lot of people don't have freezer space for all of that food.

We usually choose a night/evening and take a supper for that night and make something very basic as to not offend anyones taste, or again...the gift cards are a good idea for younger families.
