HI! I am hoping someone can help. I am having an Open House this coming Saturday and am in desperate need of new recipes. I will be serving appetizers and desserts. Any ideas? I was hoping to find something that is easy to serve, doesn't have to stay piping hot unless in a Crockpot, and of course really yummy!

I make an appetizer that could be served just lukewarm. Take a brick of cream cheese, a package of crescent rolls, some dill, and one egg. Open the package of rolls, roll out flat (really, just open them so they are in a rectangle), put some dill on both sides of the cream cheese, place the cream cheese on the rolls, then put the rolls around the cheese so it is completely covered (kind of like you would do Beef Wellington). Next, brush on egg yolk to get the top nice and golden, then bake according to the crescent roll directions. Serve this with crackers. I've also done this as individual appetizers by taking small pieces of roll and cream cheese and making little purses out of them, using the same techniques as described above.

I also have some great recipes for frozen peppermint cheesecake that requires no baking, or two Cheesecake Factory cheesecakes - one is key lime and the other is pumpkin. PM me if you are interested in any of these recipes.

Coconut shrimp is also really good, too, if you want to spend a little time frying them. Just take shrimp, then make a batter with coconut milk and sweetened coconut, flour, and club soda (it makes the batter light), dip the coconut in the batter, then deep fry until brown. Keep in the oven or on a warming tray until ready to serve. I put a hot pepper jelly on the side or else make a dip using pina colada mix and more sweetened coconut.

Not a recipe, per se, but whenever I have guests, I get a large package of smoked salmon from Costco (the prices are fabulous!), and serve it on a beautiful garnished platter with the little Pepperidge Farm deli bread, capers, onions, chopped egg, the whole traditional thing. People love it.


The is an oldie but goodie from Bon Appetit.

SNAPPY RED BELL PEPPER DIP WITH SHRIMP

You can prepare this brightly colored dip up to two days ahead.
2 large garlic cloves, peeled
3 7- to 7.25-ounce jars roasted red peppers, undrained
1 8-ounce package chilled cream cheese, cut into pieces
1 1/2 teaspoons ground cumin
1/2 cup chopped seeded tomato
1/4 cup chopped green onions
1 1/2 tablespoons chopped seeded jalapeño chili

2 pounds cooked peeled deveined large shrimp

With machine running, drop garlic cloves through feed tube of processor; chop finely. Add roasted peppers with their juices; purée until almost smooth. Add cream cheese and cumin; blend until smooth. Transfer to medium bowl. Mix in tomato, onions and jalapeño. Season with salt and pepper. Cover and refrigerate at least 4 hours and up to 2 days. Rewhisk before serving. Place dip in center of platter. Surround with shrimp and serve.

Pumpkin Cheesecake

1 1/2 c. graham cracker crumbs
5 T. butter, melted
1C. plus 1 T. sugar
3 8 oz. pkgs cream cheese, softened
1 tsp. vanilla
1 c. canned pumpkin
3 eggs
1/2 tsp. cinnamon
1/4. tsp. nutmeg
1/4 tsp. allspice

Preheat oven to 350 degrees. Make the crust by combining the graham cracker crumbs with the melted butter and 1 T. sugar in a medium bowl. Stir well enough to coat all of the crumbs with butter, but not so much as to turn it to paste. Press mixture into the bottom and part way up the sides of a springform pan. Bake the crust for 5 mintues, then set aside until ready to fill.
In a large mixing bowl, combine cream cheese, sugar, and vanilla. Mix with mixer until smooth. Add pumpkin, eggs, cinnamon, nutmeg, and allspice and continue to beat until smooth and creamy. Pout into crust. Bake for 60 to 70 minutes. The top will turn a bit darker. Remove from oven and allow to cool. When the cheesecake is at room temperature, put into refrigerator. When it is chilled, remove from pan.


Key Lime Cheesecake

1 3/4 c. graham cracker crumbs
5 T. butter, melted
1 c. plus 1 T. sugar
3 8 ounce packages cream cheese
1 tsp. vanilla
1/2 c. fresh lime juice (about 5 limes)
3 eggs

Preheat oven to 350 degrees. Make crust by combining crumbs with butter and 1 T. sugar. Press onto bottom of springform pan and part way up the sides. Bake for 5 minutes then set aside. In a large mixing bowl, combine cream cheese, 1 C. sugar, and vanilla. Mix until smooth. Add lime juice and eggs and beat until smooth and creamy. Pour into pan, then bake for 60 to 70 minutes until top turns light brown. Remove from oven and allow to cool to room temperature. Put into fridge to chill, then remove from pan and serve.

Frozen Peppermint Cheesecake

1 1/2 c. chocolate wafer crumbs
1/4 c. sugar
1/4 c. butter, melted
Combine and firmly press onto bottom and 1" up sides of springform pan, then chill
8 oz. cream cheese, softened
14 oz. sweetened condensed milk
1 c. crushed peppermint candy
3 drops red food coloring
2 c. whipping cream, whipped
Beat cream cheese at high speed until fluffy. Add milk, candy, and food coloring. Beat well. Fold in whipped cream. Pour into crust, cover, and freeze until firm.

You can also just buy the ready made chocolate crumb crusts, but you will need two of them.

Since you like key lime, here's a recipe for an easy margarita pie. Just buy individual graham cracker crusts or one 9" ready made graham cracker crust. In a large bowl, combine 14 oz. sweetened condensed milk, 1/3 c. Nellie and Joe's Key West Lime Juice, 2 to 4 T. tequila, and 2 T. triple sec. Mix well. Fold in 1/2 pint whipping cream, whipped. Pour into crust and freeze or chill until firm.

I have two quick and easy recipes that don't require them to be kept warm:

Dill Dip w/Pumpernickel Bread Bowl
Dill dip (able to buy ready-made at most grocery stores where they have the refrigerated salad dressings)
2 round loaves of pumpernickel bread

Cut out a hole in one of your loaves to make a little "bread bowl." Take the filling of bread from the hole and tear into bite-size pieces with your clean :-) hands. These are to dip into the dill dip. Then tear up your other loaf of pumpernickel for more bite-size bread pieces. Pour your dill dip into the bread bowl, and arrange bread pieces around the platter. Looks very pretty, and should be assembled at the last minute because the bread dries out eventually. Extra bread pieces store ok in a zip lock food bag.

The other is REALLY easy.

Take a block of cream cheese on a pretty plate, pour over salsa OR raspberry jalapeno jelly (find in the condiment section of the grocery store, or possibly with gourmet foods). Serve with sturdy crackers.

Simple meatball recipe

1 pkg frozen meatballs
1 bottle open pit bbq sauce
1 small jar grape jelly

Combine sauce & jelly and add meatballs and heat.
 
I just watched the Pillsbury bake off (1,000,000 give away) this weekend on the food Tv...they had lots of great ideas that looked YUMMY! Maybe you could check their site out.


I've made the meatballs and they are great!

This one requires heating, but then can be left out for a while. Buy a wheel of Brie cheese from Costco/Sam's etc. Spread some brown sugar and pecans on the top. Warm it in the oven on an oven safe plate or brie baker at 350 degrees until the sugar starts to melt or carmelize, not sure what the correct word is. Serve it with crackers or sliced baguette. Have a little spreader available for guests to use. This is soooo easy and everyone always gobbles it up.

It went wonderful!!!!!!!!!!!! Although it has taken me most of today to recoup. I have enough food to feed an army, thankfully I have company in town for the next 2 weeks!!!!
