What time should we plan to arrive to visit the World Showcase before dinner? I'm thinking we should split Epcot into 2 visits. One visit to Future World and another to World Showcase. Otherwise the kids might be falling apart by dinner time and Illuminations.

Good plan, Epcot is a huge park, the World SHowcase alone takes a whole day if you plan to visit all the sites at each country.
 
Not really sure what you're asking. Yes, WS could take all day, or it can take only 2-3 hours (asuming you see America Adventure and maybe one film). You have to really stroll slowly and go into every shop and film to stretch it out into a full day.

It depends on the age of your kids and whether or not you think they'll want to browse through the gift shops.
 

We tend to do it a little differently. We do about 1/2 of WS and 1/2 of futureworld one day and then do the rest another day. That way you are fresh and open to new experiences in each place and can change when you've had "enough" of one side of Epcot. Plus it gives my thrill-seeking 4yo two chances (at least!) to ride test track.

After being in a different park for the morning and a nice lunch and break in the room, I like to get to WS around 3:00 (you could go a bit earlier also). This gives you time to see some of the entertainment, maybe do a ride like Maelstrom and see one of the movies and the American Adventure. Get an entertainment schedule (the white papers that are at the entrance with the maps) to find out what's happening. I usually try to get one of these early in the trip so I can see what time everything starts.

Definitely see the Living Statues. (They have a different name on the entertainment guide - someone help me out here.) If you like vocal music, be sure to hear the Voices of Liberty or Vibe(??) at Amer. Adventure.
