I need to learn how to cook salmon

Salmon is the only fish I like, and I make it fairly frequently. First, I buy it skinned and deboned for ease, them follow this simple recipe:

1 lemon
Fresh Rosemary
Olive Oil
Salt and Pepper

Preheat over to 350

Cut half a lemon into slices and line the bottom of a pyrex dish with the slices and half the rosemary sprigs

Wash the fish with water then coat each side liberally with salt and pepper (I'm big on the pepper myself).

Drizzle one side with olive oil and place the fish oiled side down on top of the lemon and rosemary

Drizzle oil over the top of the fish

Squeeze the remaining lemon half over the fish, then slice what remains and put the slices on top with the remaining rosemary sprigs

Bake for about 20 minutes or until cooked through and flaky

I usually serve with rice and cooked asparagus.
 
My favorite ways of having salmon, which is my favorite fish, are: poached in a little liquid of water, salt & lemon juice. Sometimes I add dill. The water should just cover the fish. Poach on medium heat, in simmering, not boiling liquid for only about 8-12 minutes or until just flaked & done in the center. The salmon is very tender & moist this way.

I like to poach it, as well. One advantage for me is that you don't get as much of the fishy smell as you get when it's baked--although I love fish, I hate cooking it because the smell makes me a tad nauseous. Because it's a bit bland, I roast tomatoes, onions, and a thinly sliced jalapeno and top the salmon with the veggies when serving it. I top the whole thing off with some chopped green olives (which sounds kind of weird but I tried it when I saw it in a recipe and everyone loved the saltiness with the roasted veggies.)
 
I usually marinate mine in teriyaki sauce and grill, bake or broil it. Salmon is good when you add something a bit sweet to it. Then I have rice and a nice veggie. It is also good baked in a yogurt dill sauce.
 
We love salmon. I cook it once or twice a month. The kids love it this way:

1/4 cup maple syrup
2 tablespoons soy sauce
1 clove garlic, minced
1/4 teaspoon garlic salt
1/8 teaspoon ground black pepper
1 pound salmon
In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper. Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once. Preheat oven to 400 degrees. Place the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until easily flaked with a fork.

I love salmon, but I can never cook it right! I buy it at restaurants and it is out of the world. But when I make it, it just tastes fishy:rolleyes:.

Anywho, I made it a few weeks ago very similar to princess momma and it was great!!!

I took about 1/4 - 1/2 cup of maple syrup and a few shakes of soy sauce and marinated the salmon. Then I put the entire thing in a skillet and slightly seared it on both sides. I did add a touch of salt and pepper at this point. Next, I put the whole pan (mine can go from stove to oven) into a 350 degree preheated oven for about 15 - 20 minutes until they were flakey. I took them out, put them on a dish, and drizzled the sauce over them. I was wonderful!!! I am making them again today. This thread has me hungary for salmon!!!!
 

I broil it. I spritz it with olive oil(i have a spray bottle), cast a few rosemary leaves on each piece(rosemary is delicious on salmon but only use a few leaves) and then drizzle it with fresh lemon juice. Most chefs will agree that a bit of acid on fish is the perfect way to eliminate any fishy taste and bring out the good flavor. Salmon can dry out if grilled or broiled too long. Keep an eye on it. It should still be firm but break apart fairly easily when cooked correctly.
 
Just a question for all of you salmon eaters here on this thread (if you're still looking!!).

I used to eat salmon 2-3 times per week but I've now read a few articles that say that the farm-raised salmon (the type that is most affordable and prevalent in my grocery store), really does not supply the benefits that salmon is noted for. It does not have the same omega 3 fat ratio as wild salmon and, in fact, the ratios are way off. Also, the farm-raised salmon can be kind of unhealthy.

Well, that really took the wind out of my sails! I eat it occasionally now, just because I like it, but I definitely cut down my consumption. It's hard for me to even find wild salmon in our regular stores and Whole Foods is quite a trip for me. Then when I do find it, the cost is super high.

So what are you all eating?
 
We grill the fish for starters and I use a fish basket. My picky dd will eat grilled fish. Esp. if you have meat to grill along with it it picks up the meat smoke and puts it right into the fish on the grill.

Now I have bought a plank to use on the grill. I have not used it yet. You have to soak the plank in water for 1 hr. prior to grilling. Next time I cook fish on the grill I will be using this.

If you want to remove the fishy taste you can soak the fish in milk before cooking. My parents do this technique, I don't because I love fish and don't mind the "fish taste".

We are not a family that uses sauces, spices, or rubs. We prefer things plain.
 
The guy at the seafood counter recommended a very easy salmon recipe that I love. Rinse the salmon in water, sprinkle on some Old Bay seasoning, cover it with wax paper and microwave for a minute. Like everyone else says, check it for flakiness. If it needs more, put it in for 30-second intervals until it comes out just pink.

I cook salmon every week. Once I started doing that, my good cholesterol level went up.

I don't have a salmon recipe- I just do it like those that brush with oil- salt and pepper grill


But since we are talking fish I have to share my favorite muniere recipe! Oh this is so easy and yummy

I dip sole or flounder(both mild and good for those that think they don't like seafood) in flour and salt and pepper
Melt 3 TBSP butter in pan- place 2 fillets in the pan - cook 2 minutes
Flip add lemon juice and a tsp of lemon zest. cook for another 2 minutes.
MMMMM easy dinner in 4 minutes!
 
I grill it outside on a cedar plank with a garlic and lemon sauce.

Mainly because the lighter fish are too delicate for the fish basket and I get sick of cleaning the fish basket.
 
Recipe please for the mushroom sauce. :) This sounds like an interesting way to cook the salmon.


Who eats the skin on their salmon? Generally, I leave ths skin on the bottom of the plate and eat the salmon, which flakes quite easily off it. Only, the really thin, fin part (I guess,) I may eat the skin, if I had broiled it and it's nice & crispy.

The sauce depends on how inspired I am feeling that night...lol

One way I make it is to saute some baby portabella mushrooms in butter, use a can of cream of mushroom soup, some cream or milk, the sauteed mushrooms and some white wine.

The other way is to saute the mushrooms, then make a bechamel sauce. Make a roux, I generally use 1/4 butter and flour, then 2 cups milk. Or you can do 1 C milk and 1C chicken stock. You can saute some shallots and garlic with the mushrooms and then add to the sauce, bring to a boil to let the sauce thicken and then simmer to let the flavors combine.
 
We love salmon!

We buy fresh salmon alot but the frozen salmon from Costco is also really good - it has no skin on it and I've only occasionally come across a little bone.

We put olive oil and a little Old Bay Seasoning or dill on the salmon and bake it at 375 for 15-20 minutes. So good and so good for you!
