I need meal ideas

We are not what I would consider picky eaters but it seems like we cycle through the same 8 or so meals and it's getting kind of boring. I am planning a huge grocery trip in the next couple of days and would love to be able to throw some new meals into the mix. Of course the cheaper and easier they are the better but I am open to all suggestions. Thanks!
 
here are some possiblities for you, if you like any of them PM me and I'll write out a recipe

Sheppard's Pie ( basicly ground beef , vegs, mashed potato cassorole)
Chicken and Rice with Blacke beans
WHITE lassagna
Crock Pot Truckey
Crock Pot Brisket

I was trained in a 5 star for 4 years, it just depends on what your family likes
 
One that's really easy that my kids like is chicken and broccoli fettuccine alfredo.

The easiest way to make it is prepare a box of Pasta Roni (fettuccine flavor of course), and toss in some steamed broccoli and Perdue pre cooked chicken breast strips. If you want to go for more of a home made version (still quick) make some pasta (my kids like rotini because it holds the sauce), use a jarred alfredo sauce (near the regular pasta sauce) and toss in steamed broccoli and sliced grilled chicken. For an extra home made step throw it all in a oven safe dish, add some fresh grated mozzarella to the top and warm it in the oven till the cheese melts/browns, but for a quick meal with less clean up you can skip this step.
 
Pulled beef/pork BBQ

Put brisket or pork roast in crock pot add peppers and onions and add jarred bbq sauce (you can spice it up any way you like or leave it plain) and cook on "HI" until meat falls apart (4-6 hours depending on size) serve on rolls.
 

some of our warm weather faves are:
BLT's w/ salad
lemon grilled chicken and rice
southwestern chicken salad (i use fajita marinated chicken, and use salsa for the dressing, plus cheese and all the usual salad stuff)
pasta w/ sausage (the nice ones w/ the spinach and asiago cheese are a fave, they also make sundried tomato and garlic yummo)
frittata I make this when I have a load of veggies in the fridge to get rid of;
big greek salad
then the cold weather faves
pot roast (in the crock pot)
chicken pot pie (i have an easy recipe if you need it)
pasta carbonara
fajitas or quesadillas
irish stew

I forgot shepherd's pie, it's one of DH's faves (He's from Dublin, Ire so after ten years I probably know easily over 100 potato recipes.)

What's Mexican meatloaf? It sounds very interesting.

Just curious- did you name your DD after the race car driver? I love the name!

Mexican meatloaf is meatloaf made with taco seasoning, salsa and cheddar cheese instead of the normal seasoning. I don't add any other liquid other than the salsa, I use plain bread crumbs also. It is very good and you can serve it with rice and beans.

Yes we named her after the driver actually DH did lol I gave him a list of names that I liked and he liked that one because she races lol
 
I love what I've seen so far but I too am limited by a picky eater (no mayo, ketchup, salad-y, etc)

I mostly fix:
pork chops (fried and grilled)
pork loin in the crock pot - which the leftovers can be used for BBQ pork
quesadillas (chicken or cheese)
tacos
nachos
pasta w/red sauce
grilled chicken (with an EZ marinade)
cashew chicken
ribs
hamburger soup
hamburger helper

It's simple and he'll eat it. I'll play around with different combos of marinades/dry rubs to keep things different.
 
Mexican cheesy chicken in the crockpot sounds so good. Can you post that recipe?
 
Here's my family's favorite recipe. It goes in the crock pot and makes a TON, so you can freeze it and eat a couple of meals off of it, probably!

Mexican Chicken Soup
1 chopped onion
1 (16 oz) can kidney beans
1 (15 oz) can black beans
1 (15 oz) bag of whole kernel frozen corn
2 (29 oz) cans of tomato sauce (NOT spaghetti sauce)
1 (15 oz) can of diced tomatoes with green chilies (undrained, Rotel or store brand)
1 (1.25 oz) package taco seasoning
3-4 whole skinless boneless chicken breasts (can be frozen)
Mix all ingredients well in a crock pot, add chicken breasts, making sure they are completely covered. Set for low heat, and cook about 6 hours (may take a little longer if chicken was frozen).
Remove chicken from soup and shred into pieces, and return to soup.
Serve with shredded cheese, sour cream, and crushed tortilla chips, if desired.

It is so yummy!! And the ingredients are really cheap, especially if you buy store brands.

What I do is I use
boneless skinless chicken breasts
can of black beans
can of mexicorn
jar of chunky salsa
can of cream of cheddar soup

put all of that in the crock and cook 8-10 hours on low then I shred the chicken while it is still in the crock. After it is all shredded I add a block of cream cheese mix and let it cook until it is melted. You can serve this over rice or put it in a tortilla shell. It is so good and the left overs are yummy too.
