My corn bake recipe is slightly different.
Corn Bake
1 stick butter
1 small onion
1 can corn
1 can cream corn
1 box jiffy corn muffin mix
3 eggs
1 cup sour cream
2 cups shredded cheese
melt butter, dice and saute onions. Mix with the two cans of corn, muffin mix and three eggs. Spread into a casserole dish (mine is like a 9" square one). Top with lots of dollops of sour cream. Top with cheese.
Bake at 350 for 45 minutes, or until set.
You can also add green peppers, if you desire. Sometimes, I'm lazy, and just use onion powder instead of real onions, but I still melt the butter.
Another good corn recipe that will give you an instant heart attack:
1 lg bag frozen corn (like 32 ounces or so)
1 stick of butter
1 block of cream cheese.
salt and pepper to taste
Place in crock pot on low for a few hours.
