Sauce, but I do know that Italians sometimes call it gravy.
For me gravy starts with a fat, then add a thickening agent I use flour others corn starch, then add milk or broth depending on what kind of gravy you're making.

haha gravy is the italian way of saying it sauce is the americanized way.
