Sauce, but I do know that Italians sometimes call it gravy.

For me gravy starts with a fat, then add a thickening agent I use flour others corn starch, then add milk or broth depending on what kind of gravy you're making.

I call it sauce. But, everyone I work with calls it gravy. I work in an area just outside Philly. So, a rather large Italian community.

Looks like Spaghetti Sauce.

Gravy is made with first melting butter in a pan, then adding flour and whisking it. Then you add beef/chicken broth or milk, depends on what kind of gravy you make. Then you whisk it, and it thickens, you season it..and there ya go .
