Made two loaves of banana bread today since the bananas ripened super fast. Sent one to DDs house. I’m seeing KA bread flour at Meijer (hopefully the website is right). I want to try making bagels again. I found a recipe for cinnamon crunch bagels but it used regular flour. Definitely not a keeper. Not inedible but just not good. I’m hoping if I can find bread flour that makes the difference and I can try the bagel recipe posted here.

I'm all out of bread flour. The loaf of sourdough we baked was with AP instead. :sad: Does that mean I need to wait to try out that bagel recipe?
 

I posted my own which I've come up with after years of tinkering. It's easy:
1.25 c. warm water, 2 t. yeast, 1 T. honey (I used to use malt syrup but it's expensive and hard to find)

Once that bubbles, I mix it with 2 c. bread flour and 2 t. salt (I've already combined those) to form the bath.

Then I add 1.5 c. whole wheat flour (to make it a little healthier but could be bread flour).

Mix it with the bread dough hook in my KA on speed 2 until it is the right consistency. It can't be too dry but it definitely can't be too wet. I generally have to add some warm water until it all comes together, but once it seems almost right I add some bread flour to make sure it isn't too wet/sticky.

I make my dough at night, stick a plate over the bowl, and let it proof overnight.

In the morning I pound the dough down and cut it into 8 sections (about 3.5-4 oz). I make those into balls and cover them with a wet paper towel and let them rise for another 1.5 hours or so. Then I stick my finger through the middle and form them into bagels (you're supposed to make them into snakes and connect them but that's for the birds).

Then I boil them (about 1 minute per side) and bake at 400 for about 15 minutes.

Leftovers get sliced and frozen.
 
Warning for Verizon customers attempting to use the new Amex wireless credits. We already know that paying part of your monthly bill with a credit card will void the credits you receive for enrolling in autopay. You can potentially get around this by using your American Express card to purchase Verizon gift cards, then apply the gift cards to your bill.

I just used 2 AmEx Biz Plat cards to purchase 2 $25 Verizon gift cards - they are sent by mail, there is no digital redemption option. Unfortunately, when I try to use gift cards, or check their balance, they are reported to be invalid. I tried phone, text chat, and twitter, and Verizon reps are unable to resolve this issue. I was told to go to a Verizon store to have it addressed. However, a google search of, "Verizon gift card invalid," pulls up multiple reports of this same problem, and that the problem could not be resolved in physical stores. Many of these reports were for much higher dollar amounts, and it took months of escalating phone calls to get the issue resolved.

I think I'm just going to dispute the charges with AmEx. It is unfortunate to lose out on these wireless credits.

That happened to me a year or two ago. $500. The store could not fix it, but they did issue a refund for me. Never did it again after that.

Thank you! After trying 3 different recipes, I can see where tinkering to find one that works the best comes in handy. I will give your recipe a try too.

I made cinnamon raisins but I went a little overboard with the raisins.

No baking here either...as much as I love chocolate chip cookies, if I make them DH will eat them within a day or two

I thought about buying a small cake for Mother's Day for myself, but got a pint of Ben & Jerry's coffee toffee bar crunch ice cream instead. I also printed out a chocolate waffle recipe from the Ghiradelli website, not sure if I will make it tomorrow or not.

I have been having some issues sleeping and not much appetite lately, depression is helpful for weight loss, though not the best way to do it!

My weakness is chocolate...ice cream, brownies or chocolate chip cookies...only homemade and mushy...lol
have a treadmill and I’m making myself walk 2 miles a day on it...
I hear you on the sleeping. both of us haven’t been sleeping well ...DH has sleeping pills, but when he takes them the snoring is crazy and he talks in his sleep so I go into my sons old bedroom....

I love sweets too.
I also have sleep issues, but it’s not all the time. Usually about once a week. I am sorry about being depressed.
