i just made such an amazing dinner (great cookbook recommendation)

and I don't really cook, so I'm super thrilled.

It was easy, cheap and HEALTHY! The cookbook I got it from is called "Quick & Healthy Recipe and Ideas". this is the 2nd dinner I made from it and I have to say, both were outstanding.

Chicken Chimichangas (baked). Never had a chimichanga before, but I think the real kind are fried.

So easy, so good! And took less than 1/2 hr of prep and cook time.

Congratulations on your yummy dinner. Cooking is so much fun... it's one of my favorite things to do!
 
Recipe :)
4 8inch or 8 6inch whole wheat tortillas
filling
1 1/2 cups cooked and cubed chicken
3/4 cup salsa (thick and chunky)
1/2 cup grated reduced fat cheddar or mexican blend cheese

preheat to 400
mix filling in bowl

warm tortillas, wet one side of tortilla and place wet side down. Spoon in filling, fold and place seam side down in baking dish (spray baking dish with non stick cooking spray first)

bake for 15 min. (substitute beef, pork or turkey)

Silly questions... does it have pictures? I have a... um.... ahhh... small cookbook addiction (I probably have close to 200 cookbooks), but I lean towards cookbooks with pictures.

I also am on a diet, so it sounds good for me.
 
not to rain on your parade, but i dont see what is so amazing about that. i could whip that up in 15 minutes without the cookbook. meat, salsa and cheese on a tortilla? amazing might be a bit overstated. just saying...

Got to agree. Not sure what you usually eat, but jar salsa is not amazing.
 
Congratulations to the OP for making a good dinner you enjoyed.

It sounds like you are a beginner cook. Continue to use the cookbook and I hope over time you will discover the joy of cooking!!

I love to cook so I do understand the joys of finding a recipe that comes out good!!
