I just made "groundhog" cupcakes!

[It's A Happy Day]

My DS5 has been talking about groundhogs day all week. His teacher has been getting the class into it so I thought for tomorrow I would surprise him with "groundhog" cupcakes for the whole class for snack time. Anyone else want one?

They are chocolate cupcake with white frosting, sifted hot chocolate for the "dirt" and a teddy graham for the groundhog. I hope he likes them!

How much Groudnhog did you use?

I usually make Gumbo out of Groundhog. You can get the Chewieness out if you cook it for 1.5 hours. I would also recomend using okra instead of File.
