I used to always eat steak well done as well. I'd need steak sauce or something & never really LOVED steak.  Then I had a boyfriend who insisted I try it at least medium well.   He said if you have to put sauce on a steak you're doing it all wrong.  So I tried medium well; I liked it.  So then he suggested I just try medium.  O.M.G....
Truly I think it's a mental thing to not want to see blood, and I get it. I used to be the same. I still can't do rare or medium rare. It has to be cooked. But medium is the perfect middle that makes a steak "cooked" and yet still tender & delicious.
Now, I try to cook steak at home and I never get the timing right. I somehow always over cook and disappoint myself.
  The chewy steak is just NOT GOOD.  While I understand that may be what you are used to, I promise the flavor is 100000% better at medium.
