DS is participating in a weight management clinic through our local Children's Hospital and I am always looking for meals that are low cal/low fat but will leave him feeling like he has had a satisfying meal.
Last week at Sam's I came across Boca ground burger and since we have eaten Boca burgers in the past, I decided to take a chance. Last night I used the ground Boca in place of meat in my taco recipe and it was fantastic! My son liked it better than the meat tacos I have prepared in the past. If you plan to try this, note that I did simmer the mixture a bit longer than usual and I think that allowed the "meat" to soak up a lot more flavor.
The low down on ground Boca: Use an 8oz package in place of 1 pound of ground beef (volume wise they seem the same). An 8oz package is listed as 4 servings with 1/2 gram of fat per serving, 60 calories and 3 net carbs.
Anyone else have recipes using ground Boca? Please share.
