It's a standard bunk bed. Which should be the same dimensions as a twin I think. So if you can sleep in a twin, at that size with the extra constraints of the bunk (climbing in and out) then you'd be fine.
I am 5'6. I could do it, but it wouldn't be my first choice. 5'8" honestly would be probably a little uncomfortable.
I would be more concerned about hitting your head getting in and out of the bottom bunk - because the length of the bunk beds was exactly the same as the length of the double bed next to them. If you're on the tall side, I would probably take the upper bunk, as there's more head clearance to sit up in bed.
As far as golf cart vs. non golf cart goes - I was there for 10 days starting right after Easter and did not rent a cart (they were sold out before I made the reservation). I found the buses to be convenient and even that close to a holiday they weren't crowded at all. I used my car to go to some of the parks, but going to MK, I always took the bus to the Settlement, then the boat to MK. Taking the bus was never a problem. Sure, it would be convenient and fun, but I can spend that money on something else. I also took a bike with me since I drove, and I used that to get around the campground if I wasn't heading for a park (although I could have locked it up and gone to a park I figured I'd be too tired to bike back to the cabin at the end of the day
