How to do day on/day off...

Not a true day off, but a slower day after a busy one. My kids are 8 and 11 and they truly don't have anywhere near the stamina to go all out every day. I've tried the past few times we've gone and I think it takes away some of the fun for them because they're so exhausted, even with us coming back to the resort midday to rest. I was thinking about doing a rope drop day, followed by a later start, slower day but I'm not sure how to do that! I think it will work out for us, because the parks that they're not crazy about (Epcot and HS) would work out to be the slower days. But the thought of showing up later in the morning to the park gives me anxiety! How late do you show up? Do you still go back to your resort for a midday break? Any tips from those that do this would be greatly appreciated! Thank you!
 
I would continue with rope drop. It's one of the best time to get rides without a FP.

We rope drop and head back to the resort around lunch time. We are usually at WDW in the summer and midday is hot so we will head back to the resort. We will shower and change clothes. That helps me feel fresher in the evening.

This trip we were at Disney for six days and the beach for two. We took off a day from the major parks, went to Typhoon Lagoon for a a three or four hours with a break at the resort then Disney Springs for dinner and shopping.
 
We've never made it to a rope drop at any park on any trip. Our kids are now 12 and 16 and this trip we are thinking of doing rope drop because we've not done it before but we would FAR prefer staying out later and doing EMH on the end of the day instead of rope drop or AM EMH. When they were younger we'd do 2 park days and a down day, Now we do a down day (hotel or disney springs) for more infrequently. For our family we have everybody pick their ONE THING at each park. What is the ONE THING that makes it feel like a disney vacation. Sometimes we'll do 1 ride & 1 extra, our son is typically a "space mountain and a mickey ice cream" for MK, Daughter is BTMR and a stop at the tangled bathrooms to people watch and pretend that she (at 16) is indeed Rapunzel. So we will sit next to the fancy potties for 15 minutes while she twirls and is excited. It makes the trip so much more fun when we know what they highlights are and we don't have to feel like we're cramming everything in, hoping to hit the fun button. The flip of that is you don't get to grumble or grouch when we're doing someone else's pick, that makes it much more fun for us as parents lol
Years ago before they got wise sometimes they'd pick the same ride and extra....now they scheme ;) and we will ALWAYS have 2 separate events for each option.
