How to cook a Beef Eye of Round Roast?

DH bought this type of roast, which I have never bought before. I have to cook it today but Rachel Ray I ain't :lmao: . Can anyone help me out with a recipe? I guess I could just stick it in the oven but I'm not sure for how long or what temp. BTW - It is boneless and 2.44 lbs.

Eye of the Round roast is one of those that is best when simply cooked.

Sprinkle the outside of the roast with a lot of pepper and some salt (and any other good "roasting" spices you may have). I generally set my oven to 450 degrees and pop the roast in for 15 minutes to "sear" the outside. Then drop your heat down to about 350 degrees and cook for another 45 minutes or so (depends how rare you like it). This is a roast that is best cooked to medium rare. If you do it well-done it gets very tough and flavorless.
 
Also, cut it across the grain. Really good, sliced thin on sandwiches the next day. Especailly with mayo and horseradish.
 
I always place bacon across the top. It gives it a wonderful flavor, but I think everything tastes better with bacon!!

I always make a foil tent around it and keeps the moisture in and not out....I love a juicy one......I have also put it in a foil tent and added the cream of mushroom soup and a cup of water and an envelope of lipton onion soup mix......delicious and the gravy is to die for.......YUMMY

Thanks for all of the replies everyone. DH called and said he will probably cook it when he gets home from work so it looks like I'm off the hook :) . I don't think he trusts me. :confused3 . I'm going to give him these ideas though.

THat's my favorite kind of roast!! I put Onion soup mix all over it and bake in the oven at 350 until about 130. Take it out and let it rest and finish cooking. Cut across the grain, from the sides and yummy Roast Beef!!!
 
I cook mine fairly simply. oven at 350, put some olive oil and freshly ground black pepper on the roast, and cook it until the center is around 135 or so. let sit for 15 minutes before carving (don't forget the meat continues to cook for a bit so the temp will go up after you take it out). we love steaks medium, and kept overcooking roasts thinking we wanted them the same, but really, for us, this is perfect.

Well, DH came home and did a fabulous job on the roast. He basically did it like this. He is so funny. He loves to cook. I think he missed his calling as a chef. It was delish! :thumbsup2 And did I mention that I can barely stomach meat?
