how to bind journals?

I am making journals for all our kids which will be 6 in all and wanted to know what is the cheapest best way to do this? I would like to be able to add pages after our trip so that I don't have to print a bunch out and not experience it. So if we do experience it I can print it and add it.

I have thought about using a 3 ring ring binder but really would like it to be 8 1/2 x 6 so that I can take a piece of paper and fold it in half that will create the size.
What kind of paper to use for the cover and back cover? Thanks for all the help. :goodvibes
 
I have made a few "Memory Binders" just using a plain black and a plain red binder . I used page protectors (clear white sheets for most of my pages).
I used Disney stickers to decorate it and the ones I had also had a half clear inside pocket to stuff with maps and other collectibles. I picked mine up at Staples. I found most of my planning pages were 8.5x 11 and they fit perfectly into these binders.Using the page protectors you don't have to hole punch the pages.I bought a few packages of colored divider pages and decorated them using stickers also.Green -Goofy,,-Red -Mickey,, Blue- Donald,,-Minnie-pink etc.
