How soon should we book?

We will be using the ME from the airport to our Disney hotel, but we are switching to the Dolphin mid stream so we will need transportation from the Dolphin to the airport. How soon should we book it?

You may book both trips on ME at the same time. We've changed hotels mid trip also and used ME for both trips. I believe they want you to book 10 days before your arrival.

I would go ahead and book ASAP this is one area unless your getting a rental for the day or more that doesn't get discounted.

So you may as well go ahead and book sooner rather then later.

ME doesn't service the Swan or Dolphin from what I understand.

You are right - ME does not go to the Dolphin or Swan because they are not "Disney" hotels.
