how sanitary is the water in the disney rides?

I'd like to find that out as well. We always wonder how much they make from all the change in the various water rides and fountains.

They take out that change quite often. And Disney doesn't keep it. They donate it. There's only one place that I know of at Disney World where it's actively encouraged to throw money into water and that's at Animal Kingdom in one certain area. And that's so all the money goes to the Wildlife Foundation.
