How does it work when you switch resorts?

We have a 7 night stay booked at the Poly. I was checking airfares, and it may be cheaper to fly in the night before and stay at a cheaper resort, rather than take the 6:45 am flight which is a bit pricey. If we stayed at POP, how does it work with Magic Express, transfer of luggage, etc? Is it easiest to just call Disney to add this on? Think this is too much of a hassle? Any other suggestions?

Disney will transfer your luggage. I don't think ME would be a problem.

I would go down the night before, but that's me. I would prefer to catch a late flight over an early one if day one is a busy one.

As the PP said, Disney will transfer your luggage. We were told between 3-4 to your new resort. So you can leave your luggage with the first resort, go off to the parks, and later that day take the buss to the new resort to check in. Since we we not sure of our exact plans the day we switched, we just took a cab over to our second resort with our luggage, checked in and were all settled. I personally like having my luggage with me when I check in - but that's just me! Regardless, it's quite simple and painless

We have switched resorts many times. From the airport, you would take ME to the resort you are staying at for the one night. The next morning, have bell services collect your luggage and tell them what resort you are changing to. (or deliver it to bell services yourself, which is sometimes easier) We then go spend the day in one of the parks. Catch the bus from the park to your new resort. Check in and contact bell services at your new resort to get your luggage delivered to your room. ME will pick you up from your second resort to take you back to MCO. Note that luggage is usually transferred around 3pm between resorts.
