I don't do anything fancy. I use the same dough that I would use to make pizza and stuff it with everything I want but the sauce. My fav is Chicken Parm Calzones, I put the breaded cooked chicken breast in it with cheese and the fold it over, crease it and brush the top with egg wash. I use the sauce on the side for dipping.
I mix ricotta cheese with an egg or two (depending on how much ricotta I'm using--a small container gets one egg--a large container gets two), then I add:
Grated hard cheese (I'm huge fan of Reggiano Parmagiana, but you could use Romano or ordinary parmesan instead)
Shredded mozzarella
Fresh ground pepper
Diced ham (or another filling, like defrosted, well-drained spinach or broccoli)
I put the filling in the middle of my dough, then fold it and seal with egg wash. I brush the top with egg wash, then I bake it on a metal pan lined with no-stick Reynolds foil at 350 for about a half hour.
