How do the "Thanksgiving menus" work?

My sister and I are planning a trip to WDW during Thanksgiving 2016 so I'm curious to know how the special Thanksgiving menus work. Does each restaurant that offers this menu have basically the same meal, same price? Or is each meal unique to each restaurant? I like the idea of doing a Thanksgiving buffet possibly. Does that mean it would also have the restaurant's traditional offerings as well?

Any specifics/reviews would be greatly appreciated.

From what I have heard, the buffets have some of their usual offerings, plus thanksgiving offerings

1) Most eateries just add Thanksgiving menu items to their normal menu.
2) But, some have ONLY the Thanksgiving menu.
. . . example: Whispering Canyon Café: "Thanksgiving Day Holiday Platter family-style offering with no a la carte menu."
3) You need to check your individual eatery to see which option they select.
