How do magic bands and fst pass plus work if you stay off site?

we are going do WDW in November, and staying off site for the first time. We have been there twice since they had magic bands, but stayed on site.

Are magic bands of use to a family staying off site?

Can we book our rides early? When?

What are the kiosks for? Can we continue to use the app?

Do our old magic bands work? We have the ones Disney sent us for our last trip, and I bought an Anna and elsa one for my daughter about two years ago. We normally go to WDW twice a year, but right after I bought that one for her, we found out we were moving over seas, and so never used. I still have it, but will it work? I think I remember someone saying they only lasted a couple years.
