Crowds are pretty light through most of May. They start building Memorial Day weekend, so I would suggest you go in early-mid May if you want to avoid big crowds.
Crowds are light until about the 20th or so (the Saturday after a lot of the southern schools get out). We've always gone from the 11-21 (or the week equivalent to). Our longest waits are always about 15 minutes, but then once that final Sat. hits, the waits go up to 90 minutes! It's like an overnight transformation. It's crazy. It's happened exactly the same way for the past two years now. As long as you go before then, you'll have light crowds, even though it's technically a "moderate" time to go.
We've been down the first week in May 4 times now. I wouldn't say the crowds are exactly "light", but in comparison to many other times of the year, they are quite manageable.
Early May is a good time to go weather-wise also!!!
I am already booked for May 7th Thru the 14Th Staying at SOG,then on to 4 day cruise on the wonder. Have never been in May. Have always gone around july 4th. Hot, Humid,but the fireworks made it all worth it. Using suggestions from this board is priceless. Am looking forward of taking lots of pics of the flower fest. DW does not do thrill rides at all. The great movie ride at mgm is as wild as she goes.
