Horseback riding and fishing excursion

We are scheduled to arrive at Disney in June, where we will be celebrating our daughters 15th and son's 11th birthday. They are aware of everything about the trip. We would like to plan some kind of surprise for each of their special days. She has become obsessed quite recently about the desire to go horseback riding (which she has never done). My son has a new found fascination for fishing. We recently discovered both of these were available to do at WDW. We would like any feedback/tips anyone has to offer about either of these to-do's.
